O conhecimento cervejeiro foi transmitido de geração em geração de modo a garantir que os princípios de Chimay são sempre respeitados. Chimay Première was the first ale to be sold by the Trappist monks in 1862, hence the name. The monks did not want sell a beer that would compete directly with the lighter style beers in the region and harm the local economy for which they worked to reinvigorate. These local beers were known as “household beer.” So, the first brand they brought to market was the Chimay Red in 750ml bottles. It became famous for its dark copper color, rich creamy foam and nutritious quality. The beer gives forth distinct apricot aromas and has a pleasantly light and silky mouthfeel which finishes with a touch of bitterness.

Шимэ — один из 7 сортов пива в мире, которым разрешено называться подлинным траппистским продуктом. Это означает, что пиво было изготовлено под контролем и ответственностью траппистской религиозной общины, и что большая часть доходов от его продажи используется для социально-благотворительной деятельности.
Нефильтрованное, непастеризованное пиво "Chimay" Premiere является старейшим в линейке пивоварни Бир де Шимэ. Впервые оно было сварено траппистами в аббатстве Notre-Dame de Scourmont в 1862 году. Сегодня пиво варится по рецепту отца Теодора, воссоздавшего пивоваренный завод, производство и рецептуру после Второй мировой войны.

Пивоварня Bières de Chimay была основана в аббатстве Scourmont в бельгийском муниципалитете Chimay в 1862 году. Для обеспечения своих потребностей траппистские монахи освоили искусство пивоварения и сыроварения. Благодаря высокому качеству и потрясающим характеристикам, продукция траппистских монахов стала популярна и любима во всем мире. Пятьдесят процентов пива под маркой Chimay продается на экспортных рынках.

Пиво Бир де Шимэ производится исключительно из натуральных ингредиентов: воды, солодового ячменя, пшеницы, сахара, хмеля и дрожжевого экстракта. Вода для пива берется из чистейшего источника, расположенного внутри монастырских стен. Отфильтрованные твердые частицы пивного сусла перерабатываются в корм для скота, в том числе для коров, которые производят молоко для сыров Chimay. После ферментации пиво транспортируется из монастыря к месту розлива в 12 км от монастыря. После бутилирования пиво "возвращается" в монастырь, где проходит реферментацию в бутылках в течение трех недель перед отправкой в продажу. В 1988 году пивоварня была реконструирована, и сегодня новые мощности позволяют производить более 12 мегалитров пива ежегодно.
