Bia Chimay đỏ là một loại bia lên men cao và tiếp tục lên men lại trong chai.
Thành phần của bia Chimay đỏ:
Được sản xuất từ những nguyên liệu chọn lọc và tự nhiên: Nước, malt đại mạch, hoa bia houplon ( Hallertau và Galena) , nấm men đặc biệt riêng của Chimay đỏ nên bia mang chút hương vị thơm thoang thoảng của hoa quả. Bên cạnh đó, mùi thơm ấn tượng nhất là của quả mơ trong quá trình lên men theo công nghệ đặc biệt. Khi nhấp vào ngụm bia đầu tiên, đầu lưỡi bạn sẽ cảm nhận được vị ngọt nhẹ từ mùi trái cây, pha hơi chút đắng đắng đặc trưng của bia.

It's beautiful brown colour is awash with hues ranging from smoldering copper to deep ruby. It's balanced blend of generous fruity flavours and toffee pleases every palate. A succession of ripe fruits such as orange, peach and apricot is paired exquisitely with sweet malty flavours such as nougat and biscuit. Its refreshing minerality and smooth bitterness complete the palette of flavours. The delightful pairing of aromas and flavours lingers well into the aftertaste and leaves the mouth eagerly anticipating the next sip.
Chimay Red was brewed for the first time in 1862. It is the oldest of the Chimay trappist beers, hence its “Première” appellation in a 75cl bottle."

Chimay è un birrificio trappista con sede nell’omonima località della Vallonia, dove sorge l’Abbazia di Notre-Dame de Scourmont, edificata nel 1850 da alcuni monaci dell’Abbazia di Westvleteren, guidati dall’abate Jordain.
Le birre di Chimay sono stata tre la prime ad avere ricevuto il marchio ATP come Authentic Trappist Product e il birrificio è diventato uno dei due produttori trappisti più grandi del Belgio e nel mondo. Il monastero si impegna nella produzione di formaggi e di birre che garantiscono la sussistenza dei monaci, che interrompono la produzione in concomitanza con le due guerre del novecento.
Il secondo dopo guerra coincide con l’introduzione di nuove tecniche, l’ampliamento dell’impianto e l’isolamento del famoso lievito di Chimay, che caratterizza le cinque leggendarie birre prodotte dal birrificio trappista. Chimay rimane tuttora il marchio trappista più famoso e diffuso nel mondo.

A Trappist ale can only be called Trappist ale when it has been brewed between the four walls of a Trappist monastery, under the supervision of the monastery’s monks, and when part of the proceeds is earmarked for charity. Pure and honest. And that’s reflected in the taste.
A “Trappist” has to satisfy a number of strict criteria proper to this logo before it may bear this name:
The beer must be brewed within the walls of a Trappist monastery, either by the monks themselves or under their supervision.
The brewery must be of secondary importance within the monastery and it should witness to the business practices proper to a monastic way of life
The brewery is not intended to be a profit-making venture. The income covers the living expenses of the monks and the maintenance of the buildings and grounds. Whatever remains is donated to charity for social work and to help persons in need.

Chimay Rouge er den ældste Chimay øl – og for mange danskere den første trappist øl, som man smager – sammen med den kraftigere Chimay Bleu. Der er tale om en rigtig god ambassadør for trappist øl og belgisk øl i det hele taget. Aromaen er frisk med en snert af abrikos og karamel. Chimay Rouge har en særdeles flot kobberagtig farve med et cremefarvet skum. Smagen læner sig op ad duften og er faktisk silkeblød med en fin balance. Den er frisk og efterlader en behagelig, frisk bitterhed på tungen kombineret med en eftersmag af karamel. En virkelig fin Dubbel øl, som alle ølelskere skal smage.

La Chimay Rouge est la plus ancienne des Chimay. Cette bière Trappiste possède une belle couleur cuivrée, ce qui la rend particulièrement attrayante. Bien que qualifiée de "brune" sur l'étiquette, elle est plus proche d'une ambrée et beaucoup moins foncée que la Chimay bleue
Surmontée d'une mousse crémeuse, elle dégage une légère odeur fruitée abricotée provenant de la fermentation. L'arôme perçu en bouche est un équilibre confirmant les nuances fruitées décelées à l'odorat.
