As with its sister product Cantillon Kriek, Cantillon Framboise is a fruit beer that is produced by blending raspberries and Lambic beer. For every liter of Lambic beer that has aged for approximately 20 months, 200 grams of Serbian raspberries are added. After two or three months the Lambic beer is soaked with the characteristics of the fruit, after which it is blended again with one year old Lambic to have enough sugars to create a second fermentation in the bottle.
Raspberries are a delicate fruit, meaning it is important to select a Lambic that has a mellow and subtle taste so as to complement rather than to overtake its characteristics. In this sense, it is very difficult to produce a Framboise (raspberry beer) with both the dry acidity of a Lambic and the refreshing sweetness of the raspberries. Cantillon Framboise – the official name Rose de Gambrinus – accomplishes this with flying colors. It strikes a perfect balance between sour and sweet, with additional notes of vanilla, cherry and oak.
When drunk fresh, the fruitiness of the raspberries will have the upper hand. The more you let it age, the more the characteristics of the Lambic beer will prevail.

He was admiring the colour of the raspberry lambic reflecting in the red copper of the buckets used to empty the barrels. At that time (1986), “Raspberry-Lambic” already was synonymous with a sweet, artificially flavoured beer. This is why we decided to distinguish our beer from the other raspberry beers. Raymond proposed to call it a rosé, dedicated not to Bacchus but to Gambrinus. The process to make this beer is identical to the one to make Kriek. When young, the Rosé de Gambrinus will still present its full fruity taste. Later on, the lambic taste will become dominant at the expense of the fruit taste.

Just like kriek, the “fruitiness” of Rosé de Gambrinus is at its best when the beer is young. With age the lambic will take the upper hand, but this is at the expense of the fruit component.
The raspberries are from Serbia and the fruit is blended with lambic that is on average 20 months old, the proportion being 200 g of fruit per litre of beer. Since raspberries are delicate it is necessary to select a lambic that is both mellow and subtle so that it will be a good match for the fruit. After soaking for two to three months, the lambic has extracted the full colours, fragrances and flavours of the raspberries. At that point it is blended with one-year-old lambic, which contributes the sugars necessary for secondary fermentation in the bottle.
We only use fresh fruit and, as is the case for wine, Cantillon beers can be referred to in terms of vintages. Prevailing weather conditions have a major impact on the ripeness and quality of the fruit, and this is why the taste of the brewery’s fruit-based beers will differ slightly from one year to the next. While kriek certainly already existed in the 19th century, it is more difficult to determine when raspberry lambic first appeared in Brussels pubs. In any case, the beer certainly was available at the beginning of the 20th century, and Paul Cantillon indicates a greater number of bottles of raspberry lambic than kriek in his inventory for 1909-1910. Fruit beers disappeared from the inventory during the First World War, but from 1922 on kriek was produced again on a regular basis. As for the raspberry lambic it was produced again for a short time in the 1930s, but is completely absent from the inventories afterwards. One day in 1973, a friend, Willy Gigounon, showed up at the brewery with 150 kg of raspberries in trays. The final result was that the production of raspberry beers started up again 40 years after the last known date."
