Cantillon say “The raspberries are from Serbia and the fruit is blended with lambic that is on average 20 months old, the proportion being 200 g of fruit per litre of beer. Since raspberries are delicate it is necessary to select a lambic that is both mellow and subtle so that it will be a good match for the fruit. After soaking for two to three months, the lambic has extracted the full colours, fragrances and flavours of the raspberries. At that point it is blended with one-year-old lambic, which contributes the sugars necessary for secondary fermentation in the bottle. We only use fresh fruit and, as is the case for wine, Cantillon beers can be referred to in terms of vintages. Prevailing weather conditions have a major impact on the ripeness and quality of the fruit, and this is why the taste of the brewery’s fruit-based beers will differ slightly from one year to the next.”

Rose de Gambrinus. “It has the colour of onion skin”, said a voice behind me. It was Raymond Coumans. He was admiring the colour of the raspberry lambic reflecting in the red copper of the buckets used to empty the barrels. At that time (1986), “Raspberry-Lambic” already was synonymous with a sweet, artificially flavoured beer. This is why we decided to distinguish our beer from the other raspberry beers. Raymond proposed to call it a rosé, dedicated not to Bacchus but to Gambrinus. The process to make Rose de Gambrinus is identical to the one to make Kriek. When young, the Rosé de Gambrinus will still present its full fruity taste. Later on, the lambic taste will become dominant at the expense of the fruit taste.

Esta Cantillon – Rosé de Gambrinus es una de las cervezas más demandadas de su repertorio. Se trata de una mezcla de lambics con la adición de frambuesas , en la cantidad de 200 g por litro de cerveza. Los productores nos recomiendan probar esta cerveza cuando todavía es joven ya que, con la edad, la parte acética lambic predominará demasiado sobre su parte frutal. Para la elaboración se utilizan frambuesas de serbia que se mezclan con la lambic 20 meses. Después se mezcla con una lambic joven suave y sutil para no matar la delicadeza de las frambuesas.
Consideramos que se trata de todo un lujo gastronómico poder degustar esta cerveza y que dado lo solicitadas y racionadas que están nos merecemos casi un monumento por compartirlas con vosotros. ;-D
