Oude Geuze Boon is one of the finest examples of the traditional 100% spontaneous fermentation Lambic style. To moderate the sourness, Boon Brewery only brews Lambic in the 7 cold months, from early October until April, according to the traditional “turbid mash” system. This Lambic beer is aged for 1, 2 or 3 years in oak casks. The blend, a mild average 18 months old Lambic (unsweetened, unfiltered, unpasteurised) is refermented in the bottle and can be stored up to 20 years. Brewed in Lembeek, the village that gave Lambic its name. Awards at the World Beer Championships: 2008 Gold, 2010 Silver, 2012 Gold Medal.

Pours a beautiful golden color with a tall white head. Very sour smelling aroma with almost a raspberry smell to it. Taste is fairly sour with a quick sweetness at the start. La Gueuze Boon à l’Ancienne est un hymne au plaisir avec un taux d'alcool de 7%. Elle se compose de 90% de lambic moelleux âgé de 18 mois, de 5% d’une bière de caractère de 3 ans et de 5% de lambic très jeune qui lui fournit les sucres fermentables et les levures viables. Ce mélange se fait dans un récipient de 25.000 litres placé au frais. Toutes nos bières s'affinent dans des foudres de chêne. Avant embouteillage, la gueuze est portée à température de fermentation pour subir une seconde fermentation. Puis, embouteillée, elle commence une maturation de plusieurs mois dans une salle climatisée pour développer sa saveur délicate.

This Oude Geuze is a traditional unsweetened, unfiltered Oude Geuze from Lembeek. Brewed from 60% malt and 40% wheat, it ripens under the name Lambic in oak casks. Oude Geuze consists of 75% tender lambic of an average age of 18 months and 25% characteristic lambic of 3 years. We mix them in a 25,000 liter mixing vessel and keep the mixture cool. For bottling, we bring the gueuze back to fermentation temperature. We place the bottles in a climate-controlled cellar, so that the Gueuze can ferment in the bottle. After several months of aging in the bottles, this gueuze gets its fine taste. After this refermentation in the bottle, it is given the name Oude Geuze Boon.
