É uma cerveja fresca, frutada com notas cítricas e amadeiradas do estágio em barricas de carvalho. O paladar é claramente sour mas equilibrado, não fosse este um dos exemplos do estilo. Como a cerveja não é adoçada, filtrada ou pasteurizada recomenda-se que a conserve refrigerada e na vertical, pode ser guardada por 20 anos. Na altura da degustação, sirva lentamente e sem perturbar o sedimento de levedura na garrafa.

Esta cerveja, sour e frutada, acompanha muito bem pratos intensos e salgados como Mariscos, Charcutaria ou Queijos cremosos.

As cervejas produzidas por Frank Boon são aclamadas por todo o mundo cervejeiro, pela qualidade dos ingredientes, pelo rigor na produção e, fundamentalmente, pela mestria no blend. Oude Geuze Boon is a monument of taste with an alcohol content of 7%. It’s a magnificent blend of 90% mild 18 month-old lambic, 5% strong 3 year-old beer and 5% very young lambic, which provides fermentable sugars and wild yeasts. All our beers are aged in oak casks, mixed in a vessel of 25,000 litres and chilled. Before bottling, we bring the mix to fermentation temperature. The bottles are then placed in an air-conditioned room, which leads to a secondary fermentation in the bottle. This is when the lambic becomes gueuze. After several months of aging in the bottle, the gueuze develops its delicate flavour. Want to know the bottling date? Simply subtract 20 years from the “best before” date!
Taste carefully and you will uncover a fruity grapefruit and ginger flavour with a hint of Muscat grapes. You’ll be pleasantly surprised by the wholehearted body and the sublime finish – an explosion of Germanic and Romance cultures.

Stil und Farbe : Lambic Gueuze.

Das Oude Geuze Bonn gehört zu den Lambic Bieren, diese werden nicht ober- oder untergärig hergestellt, sondern durch eine spontane Gärung. Gebraut werden diese Biere mit „wilden“ Hefen aus der Luft, die es nur in der Gegend um Lembeek nahe Brüssel gibt. Wenn die Würze über Nacht abkühlt, kommen die wilden Hefen in den Sudkessel unter dem Dach der Brauerei und setzen den Gärprozess in Gang. Nach der Spontangärung wird das Bier in Eichen- oder Haselholzfässern gefüllt und in einem dunklen und muffig riechenden Raum gelagert, wo das Bier ruhen kann. Eine Brauart, so wie es die ersten Brauer getan haben. Heute sind die Lambics so etwas wie die schwarzen Schafe der Brauer. Der Brauprozess ist nur schwer zu kontrollieren, das Ergebnis sind Biere mit faszinierenden, säuerlichen Aromen. Spontangärige Biere werden nur in der kleinen Region um Lembeek hergestellt. Eine Geuze wird auch Umgangssbprachlich „Brüsseler Champagner“ genannt, sie entsteht durch den Verschnitt verschiedener Lambics und einer anschließenden zweiten Gärung in der Flasche.
