Brouwerij Boon è un birrificio dedicato alla produzione di birre a fermentazione spontanea, indubbiamente riconosciuto come uno dei più capaci. Situato a Lembeek, al confine tra le Fiandre e la Vallonia, Boon produce Geuze, Oude Geuze, Kriek, Oude Kriek, Faro e Framboise, che vantano numerosi premi in tutto il mondo.
La produzione di Boon inizia ufficiosamente nel 1975 quando Frank Boon, birraio e miscelatore, acquista il Geuzesteker di Renè De Vits. Nel 1978 inizia l’acquisizione e il processo di rinnovamento dell’impianto, che culmina nel 1982 con il trasloco in un magazzino nel centro di Lembeek. Dopo un periodo nel quale Frank Boon si dedica alla selezione e alla miscelazione di lambic, nel 1990 inizia l’attività produttiva di Brouwerij Boon, che trova un grande e positivo riscontro nel pubblico.
Nel 2010 il birrificio si estende raggiungendo una capacità produttiva di 21000 hl annui e diventa l’attività con lo stock e la cantina di botti in rovere più grande del mondo. Le birre di Boon hanno ricevuto importanti riconoscimenti a livello mondiale, come le medaglie d’oro nei concorsi World Beer Cup e Brussels Beer Challenge.

Das Oude Geuze Bonn gehört zu den Lambic Bieren, diese werden nicht ober- oder untergärig hergestellt, sondern durch eine spontane Gärung. Gebraut werden diese Biere mit „wilden“ Hefen aus der Luft, die es nur in der Gegend um Lembeek nahe Brüssel gibt. Wenn die Würze über Nacht abkühlt, kommen die wilden Hefen in den Sudkessel unter dem Dach der Brauerei und setzen den Gärprozess in Gang. Nach der Spontangärung wird das Bier in Eichen- oder Haselholzfässern gefüllt und in einem dunklen und muffig riechenden Raum gelagert, wo das Bier ruhen kann. Eine Brauart, so wie es die ersten Brauer getan haben. Heute sind die Lambics so etwas wie die schwarzen Schafe der Brauer. Der Brauprozess ist nur schwer zu kontrollieren, das Ergebnis sind Biere mit faszinierenden, säuerlichen Aromen. Spontangärige Biere werden nur in der kleinen Region um Lembeek hergestellt. Eine Geuze wird auch Umgangssbprachlich „Brüsseler Champagner“ genannt, sie entsteht durch den Verschnitt verschiedener Lambics und einer anschließenden zweiten Gärung in der Flasche.

Lambic – Gueuze – Bottle 375ml – 7.0%
Oude Geuze Boon is a monument of taste with an alcohol content of 7%. It’s a magnificent blend of 90% mild 18 month-old lambic, 5% strong 3 year-old beer and 5% very young lambic, which provides fermentable sugars and wild yeasts. All our beers are aged in oak casks, mixed in a vessel of 25,000 litres and chilled. Before bottling, we bring the mix to fermentation temperature. The bottles are then placed in an air-conditioned room, which leads to a secondary fermentation in the bottle. This is when the lambic becomes gueuze. After several months of aging in the bottle, the gueuze develops its delicate flavour. Want to know the bottling date? Simply subtract 20 years from the “best before” date!
