En ægte Geuze som er en blanding af 1, 2 og 3 år gammel lambic ufiltreret og upasteuriseret og lagret på flaske i mindst 6 måneder efter blanding.
Fortsat gæring i flasken giver denne Geuze sin berømte champagne-lignende sprittighed.
Den lambic, der går i den, er kun brygget med 60% bygmalt, 40% umaltet hvede, lagret humle og vand, spontangæret af vildgær og modnet på egetræsfade.

We put a large part of lambikken of at least 24 months old (44%) and of at least 36 months old (36%). This way, the weighted average age of this blend upon bottling is more than 29 months. Of the lambikken brewed by 3 Fonteinen, more than half of the cereals used was sourced from our own Cereal Collective in and around Pajottenland.

Brouwerij 3 Fonteinen is one of the last traditional lambic breweries and geuze blenders in Belgium. Rooted in the village of Beersel in the Zenne Valley between Brussels and the Pajottenland, 3 Fonteinen has a firm belief of what lambic tradition looks like. That is why we steadfastly continue to create the finest authentic lambic beers – 100% spontaneous from brew to bottle – continuing with the same strict process and craftsmanship used by Gaston and Armand Debelder.
Family-owned with a team of 15 enthusiasts, we still brew in the village centre of Beersel while giving our barrels and bottles of geuze and fruit lambic time to develop in our warm room in Lot, a few kilometers away from the brewery.

For this Oude Geuze, we blended lambikken of six different brews and five different barrels, of which three were freshly emptied Oloroso Sherry barrels. More than 75% of the lambik has aged in such barrels. We used young lambik, more than 60% of two-year old lambik and almost 20% of four-year old lambik. This way, the weighed average age of this blend upon bottling is more than 27 months. Of the 3 Fonteinen lambikken (+80%), virtually all were brewed with local cereals from our cereal collective.

La Oude Geuze è una miscela di lambic prodotti con una percentuale di frumento non maltato tra il 30% e il 40%. E’ una birra storica dal carattere unico, con i tipici sentori acidi e aromi che variano dal pollaio, cuoio, terroso, caprino, fieno, cavallo e sella di cavallo. Come ogni buon lambic si consiglia di provare bottiglie dello stesso lotto in periodi o anni differenti.

La 3 Fonteinen Oude Geuze ha ricevuto il primo premio dall’OPB (De Objectieve Bierproevers) nel 1993. La Oude Geuze è inoltre una specialità tradizionale belga garantita.
Brouwerij 3 Fonteinen
Brouwerij 3 Fonteinen è un birrificio belga con sede a Beersel a pochi km dalla capitale Bruxelles. Il birrificio deve il suo nome alle 3 pompe dalle quali si spillavano lambic, kriek e faro dal 1883, quando Jacobus Vanderlinden e Joanna Brillens aprirono la omonima locanda. 3 Fonteinen cambia gestioni e proprietari nel corso degli anni sino a passare dalle mani di Gaston Debelder nel 1953, il quale grazie alla guida di Jan-Baptist Vanderlinden impara i segreti della selezione dei lambic.
Nel 2005, alla morte di Gaston, succedono alla guida Armand e Guido. Armand si occupa di selezionare i lambic e miscelarli, Guido gestisce la ristorazione. Nel 2012 il birrificIo si dota di un impianto da 40 hl e affianca la produzione in loco all’attività di miscelazione di lambic provenienti da Lindemans, Boon e Girardin.
Ad oggi kriek, lambic e geuze di 3 Fontainen sono tra i più ricercati da parte degli amanti delle birre a fermentazione spontanea.
