Para muchos cerveceros lambic y mezcladores de geuze, su historia más temprana está envuelta en cierto misterio. Brouwerij 3 Fonteinen no es una excepción. La fundación se remonta al menos al año 1882, cuando Jacobus Vanderlinden y su esposa Joanna Brillens abrieron una posada en Beersel (en el lugar de la actual Hoogstraat 13). El nombre 3 Fonteinen probablemente se refiere a las tres bombas manuales de porcelana de las que brotaban lambic, faro y kriek, pero esto no es del todo seguro. Investigaciones recientes se refieren al valle detrás de la cervecería donde brotaron tres manantiales, entonces también llamados "fuentes". La Oude Geuze di 3 Fonteinen è una birra acida prodotta dal rinomato birrificio di Berseel, una miscela di lambic invecchiati rispettivamente 1,2 e 3 anni. A seguito dell’assemblaggio la 3 Fonteinen Oude Geuze riposa in cantina almeno un anno e successivamente viene immessa sul mercato, con una scadenza dichiarata di 20 anni che può andare anche oltre. Questa birra acida si presenta con un colore giallo dorato e con schiuma bianca cremosa e di poca persistenza; presenta una discreta torbidità e la tipica frizzantezza dello stile. Al naso frutta, agrumi e vaniglia; gli aromi sono quelli tipici dei lambic, sentori animali, note lattiche e acetiche. Data la natura in continua evoluzione il profilo organolettico è mutevole relativamente all’annata, l’invecchiamento e la conservazione. Questa Oude Geuze dal corpo leggero e dotata di buona secchezza è incredibilmente scorrevole e beverina.

La Oude Geuze è una miscela di lambic prodotti con una percentuale di frumento non maltato tra il 30% e il 40%. E’ una birra storica dal carattere unico, con i tipici sentori acidi e aromi che variano dal pollaio, cuoio, terroso, caprino, fieno, cavallo e sella di cavallo. Come ogni buon lambic si consiglia di provare bottiglie dello stesso lotto in periodi o anni differenti.

La 3 Fonteinen Oude Geuze ha ricevuto il primo premio dall’OPB (De Objectieve Bierproevers) nel 1993. La Oude Geuze è inoltre una specialità tradizionale belga garantita.

Brouwerij 3 Fonteinen

Brouwerij 3 Fonteinen è un birrificio belga con sede a Beersel a pochi km dalla capitale Bruxelles. Il birrificio deve il suo nome alle 3 pompe dalle quali si spillavano lambic, kriek e faro dal 1883, quando Jacobus Vanderlinden e Joanna Brillens aprirono la omonima locanda. 3 Fonteinen cambia gestioni e proprietari nel corso degli anni sino a passare dalle mani di Gaston Debelder nel 1953, il quale grazie alla guida di Jan-Baptist Vanderlinden impara i segreti della selezione dei lambic.

Nel 2005, alla morte di Gaston, succedono alla guida Armand e Guido. Armand si occupa di selezionare i lambic e miscelarli, Guido gestisce la ristorazione. Nel 2012 il birrificIo si dota di un impianto da 40 hl e affianca la produzione in loco all’attività di miscelazione di lambic provenienti da Lindemans, Boon e Girardin.

Ad oggi kriek, lambic e geuze di 3 Fontainen sono tra i più ricercati da parte degli amanti delle birre a fermentazione spontanea.

03/05/2022 | For this particular blend of Oude Geuze, we blended lambikken originating from six different barrels and ten different brews, brewed by three different brewers. We put a large part of lambikken of at least 24 months old (44%) and of at least 36 months old (36%). This way, the weighted average age of this blend upon bottling is more than 29 months. Of the lambikken brewed by 3 Fonteinen, more than half of the cereals used was sourced from our own Cereal Collective in and around Pajottenland.

This particular Oude Geuze was blended with lambikken from four different barrels and four different brews. The oldest lambik – almost four years old when bottled – was brewed in early 2016.
