03/05/2022 | For this particular blend of Oude Geuze, we blended lambikken originating from six different barrels and ten different brews, brewed by three different brewers. We put a large part of lambikken of at least 24 months old (44%) and of at least 36 months old (36%). This way, the weighted average age of this blend upon bottling is more than 29 months. Of the lambikken brewed by 3 Fonteinen, more than half of the cereals used was sourced from our own Cereal Collective in and around Pajottenland.

De Oude Geuze van 3 Fonteinen is een mix van 1, 2 en 3 jaar oude lambiek die op eiken vaten gerijpt wordt. De Oude Gueuze is oranje van kleur, met een fijne schuimkraag en een uitzonderlijke neus: met houtachtige accenten en aroma’s van appel en citroen, gepaard met een verassende complexiteit. In de mond meldt zich een interessante zuurheid die perfect samengaat met de heerlijke smaken van appel en citroen die in de mond hun opwachting maken. Zoals bij het merendeel van de ambachtelijke geuzen kan men ook deze geus enige tijd wegleggen, zodat de zuurheid enigszins afneemt en de fruitige aroma’s zich kunnen ontwikkelen.
