"For this particular blend of Oude Geuze Cuvée Armand & Gaston, we selected lambikken from four different barrels and five different brews. The blend consists of 60% oude lambikken, bringing the weighted average age upon bottling to more than 21 months. The oldest lambikken were brewed in April 2019 and that same lambik aged for more than a year on a freshly emptied Oloroso barrel. That barrel comes from the last bodega of Josefa Perez Rosado, near the Church of Santiago in Jerez De La Frontera. Two thirds of the combined total grain bill was sourced with our Pajottenland Cereal Collective, and half of the blend is organic. The hops used were 18 years old on average. Bottle count: 639."

3 Fonteinen – Cuvée Armand & Gaston. 3 Fonteinen es una cervecería belga situada en Beersel, cerca de Bruselas en la conocida como “Zona Lambic ”. Todo empezó cuando Gastón Debelder y su esposa Raymonde Dedoncker, progenitores de Armand, actual alma mater de la cervecería, se instalaron en Beersel. Ahí se hicieron cargo de una tasca en la que históricamente se mezclaban lámbicas.

El negocio lo heredaron sus dos hijos, Guido se hizo cargo del restaurante y Armand de la cervecería. Aunque empezaron como blenders en 1999 sacaron su primera lambic realizada de manera íntegra en sus instalaciones. Un accidente tecnológico dio al traste con el crecimiento y consolidación de la cervecería en el 2009. Se perdió gran parte de la producción en botella pero Armand, con una idea de genio, supo sacar provecho a parte de lambic recalentada haciendo un destilado con el nombre de Armand’s Spirit. Gracias a eso pudo reflotar la empresa y volver a poner a 3 Fonteinen en el top del reconocimiento internacional.

3 Fonteinen – Cuvée Armand & Gaston es la nota emotiva de la cervecera. Esta Oude Geuze de 7% nace como homenaje a Gastón, padre de Armand, y a la pasión de ambos por este tipo de cervezas. Como toda buena Geuze, “C” es una mezcla de lambics de 3, 2 y 1 año, que continúa su maduración y evolución en botella. Por eso hay en el mercado multitud de blends diferentes y ninguno es exactamente igual a otro. Pero en todos encontrarás su gran equilibrio entre acidez, recuerdos a manzana, cítricos y mucha finura.

A Gueuze egy belga, spontán erjesztett savanyú sörtípus, amely több évjáratú lambic keveréke, mondhatni ezeknek a csúcsa. Itt a frissebb lambicot (~fél éves) keverik öregebb (2-3 éves) lambic sörökkel. Ezt a folyamatot nevezzük blendelésnek. Ezek után a sört palackba töltik és mivel a friss lambicban még van élő élesztő és maradék cukor, megkezdődik a másodlagos erjedés, ami általában 1 évig tart.

HISTORIA 3 FONTEINEN
Fue fundada en el año 1887 como un local que funcionaba como café y a la vez productor de lambics. Donde elaboraban gueuze mediante la mezcla de lambics jóvenes y añejadas que eran adquiridas de otras cerveceras. La compañía fue adquirida en 1953 por Gastón De Belder, amplió el negocio con un restaurante, al comienzo de la década de los 80 falleció y la empresa la heredaron sus hijos Armand y Guido. Armand se quedó al mando de la fábrica. Continuo con la tradición de la mezcla de lambics, actualmente ya no sólo mezcla, también elabora sus propias cervezas. Boon, Girardin, Lindemas y Cantillon son las cerveceras que les proporcionan los lambics para poder hacer la mezcla y obtener sus geuze.
