Десять французских монахов-траппистов, проживавших среди болот на древней дороге к Антверпену, были одержимы идеей, построить аббатство, основанное на плане Нотр-Дам-де-ла-Грант, в Соллиньи-ла-Траппе. В этом разоренном войной регионе им удалось организовать начало строительства, однако ненадолго… Французская революция вскоре докатилась и до Этого местечка, монахом пришлось скрываться в Германии. Но Они верили, что Это не конец мечте о Вестмалле и в 1802 году смогли вернуться. Зданиям аббатства был нанесен ущерб, но это не остановило Траппистов и к 1842 году получено официальное признание аббатства. А двенадцатью годами ранее, в 1830 году Отец Бонавентура Германс стал главным пивоваром Аббатства. Очень важно, что в прошлой жизни он был фармацевтом целителем и очень умело пользовался целебными травами. И это было отнюдь не случайно, в те времена пиво считалось напитком очень полезным для здоровья. Какое то время пиво было напитком только для служебного пользования, для своих…., но хитрые и предприимчивые монахи продавали отличное пиво прямо у ворот аббатства. К началу двадцатого века к пивоварне Вестмалле пришел успех. Использование стеклянных бутылок было своевременным и успешным. К 1922 году здесь производилось два сорта – традиционный ячменный и дюбель брюн – двойной коричневый. В 1933 году торговая марка Trappistenbier стала официальной маркой Вестмалле. И вот 1934 год. Открывается новый пивоваренный зал. Открыт именно для того чтобы в нем был сварен Знаменитый Трипель - мать всех Tripels!!! Это пиво позволило имя Вестмалле выгравировать в почетном ряду пивоваров. Im Glas fällt zunächst die dunkle rotbraune Farbe des Westmalle Dubbel auf. Schon der Geruchstest lässt einen sehr malzigen Körper erahnen. Geschmacklich ist das Dubbel würzig und fruchtig mit einer leichten Bitternote im Abgang. Alles zusammen hinterlässt ein sehr volles und komplexes Aromaprofil. Insgesamt ist das Dubbel sehr gut zu trinken, da es recht mild ist. Die Milde kommt vor allem von der Flaschengärung, denn nachdem das Westmalle Dubbel in die Flasche abgefüllt wurde, gärt es da noch etwas nach.
