Ficha Técnica A primeira menção de uma cervejeira no mosteiro de Rochefort data de 1595. A abadia e sua cervejaria foram fechadas em 1794. A abadia foi depois restabelecida em 1887 e a cervejeira em 1899. Cerca de quinze monges vivem atualmente na Abadia de Rochefort.

A Rochefort 8 é a “irmã” mais nova da gama completa da Rochefort. Todas as cervejas desta abadia seguem a mesma receita, o que vai diferenciando umas das outras é a quantidade de maltes e açúcares adicionados, o que dá origem a versões mais ou menos encorpadas e mais ou menos alcoólicas da mesma cerveja base. Segundo o “irmão” Antoine as cervejas chamam-se simplesmente 6, 8 e 10 porque estão prontas para beber respetivamente às seis, oito e dez semanas, se bem que alguns devotos gostam de deixar a mais forte por mais um mês ou dois.

Uma curiosidade, quando Michael Jackson1 visitou a abadia e provou as cervejas, as suas notas de degustação faziam-lhe lembrar comida, o “Irmão” Antoine explicou que aquelas cervejas já tinham sido comida, de facto, pois este monges trapistas não comiam carne nem peixe e mesmo o queijo foi banido durante um longo período. Ou seja, sem os nutrientes da cerveja, os monges simplesmente não teriam resistido. Hoje em dia as regras dietéticas já não são tão rígidas, felizmente.

Brasserie de Rochefort is a Belgian brewery which produces four beers designated as Trappist beers. The earliest mention of a brewery at the Trappist monastery of Rochefort Abbey dates from 1595. The abbey and its brewery were closed in 1794. The abbey was re-established in 1887 and the brewery was re-established in 1899. Around fifteen monks currently live at Rochefort Abbey. The water for the beer is drawn from a well inside the monastery walls. Rochefort uses Pilsener and Munich-type malts, and Hallertau and Golding hops.

Для этого должен быть соблюден определенный ряд правил: пиво варится в стенах аббатства траппистов, самими монахами или под их контролем; целью пивоварни не должно являться получение прибыли, а доходы используются для содержания монахов и аббатства и для благотворительных целей и социальной работы.Аббатство Нотр-Дам де Сен-Реми расположено на полпути между Брюсселем и Люксембургом, в небольшом городке Рошфор. Этот город является географическим центром небольшой природной территории Фаменн. Аббатство существует уже восемь веков. На территории монастыря есть своя сыроварня, винодельня, где производятся ликеры, и пивоварня, работающая с 1595 года. Ключевыми материалами, используемыми в производстве пива, являются чистейшая вода из источника, ячменный солод, сахар, хмель и дрожжи.
