The modest dimensions of this brewery enable the Trappist monks and their collaborators to perfectly control production. Its artisan nature is particularly appreciated by more discerning palates. This beer contains only natural products; spring water, malt barley, hops, sugar. The “Rochefort Trappist Yeast” ensures the fermentation. Fermented again in the bottle, the Trappistes Rochefort releases its essence when it is served in an original glass at a temperature between 12 to 14°C.

A “Trappist” has to satisfy a number of strict criteria proper to this logo before it may bear this name:

The beer must be brewed within the walls of a Trappist monastery, either by the monks themselves or under their supervision.

The brewery is not intended to be a profit-making venture. The income covers the living expenses of the monks and the maintenance of the buildings and grounds. Whatever remains is donated to charity for social work and to help persons in need.

Birra e Birre

La Rochefort 8, nota anche come tappo verde, è la birra trappista più venduta da Rochefort, che copre oltre il 60% della produzione totale del birrificio belga. Prodotta per la prima volta nel 1954 per ordine di un cliente, questa birra ha riscontrato un notevole interesse, tanto da entrare subito nella produzione del monastero. Ha un colore marrone con riflessi rossicci e una schiuma fine e compatta, con una buona persistenza. Al naso presenta note fruttata e speziate, dalla vaniglia agli agrumi e alla frutta matura; in bocca risulta morbida e piacevole, con sentori di caramello e di liquirizia. Nonostante il 9,2%vol la Rochefort 8 è beverina e ha un corpo solido ma non eccessivo. Dal finale secco e amaro, lascio un piacevole retrogusto.

La dark strong ale è una tipica ale belga, corposa e ben strutturata, dall’aspetto scuro e incentrata sul malto e sui toni fruttati.

Rochefort è uno dei marchi trappisti più famosi al mondo, uno dei sei birrifici del Belgio che possiede la denominazione di Authentic Trappist Product. La Brasserie di Rochefort si trova all’interno dell’Abbazia di Notre Dame de Saint Remy, in Vallonia, nel piccolo paese di Rochefort.

L’abbazia viene costruita nel 1230 mentre la produzione della birra inizia con l’arrivo dei monaci trappisti nel 1464, anche se il primo documento ufficiale che conferma l’attività brassicola è datato 1595. La produzione subisce delle pause in occasione dei grandi eventi della storia europea, ma dal 1952 continua ininterrottamente.

Le tre birre di Rochefort vengono prodotte con il proprio lievito e con l’acqua proveniente dalla fonte all’interno del monastero, e vengono fatte per un numero di settimane equivalente alla denominazione, adottata secondo la scala di Baumè.
