Brouwerij der Trappisten van WestmalleFor over 200 years, the monks of Westmalle have been choosing to live a life of prayer and work. True to the Rule of Saint Benedict, they ensure their own means of sustenance. For this reason, there is a farm, a cheese dairy and a brewery inside the walls of the Trappist abbey. These three things are deliberately kept to a small scale, and particular care is taken of people and the environment. The brewery’s income is used to make the necessary investments in this respect, to make changes in line with developments in brewing technology, to support Trappist communities and to carry out charity work.

As cervejas trapistas de Westmalle refermentam na garrafa e por isso o paladar e aroma continuam e evoluir após o engarrafamento. Os monges trapistas deixam alguns conselhos em relação à forma de guardar e servir as suas cervejas: guarde as suas garrafas numa posição vertical e sirva a cerveja delicadamente, guardando cerca de 1 cm de cerveja (e levedura) na garrafa. Desta forma, a levedura não vai para o copo e a sua Westmalle fica perfeitamente límpida. Algumas pessoas gostam de beber a levedura depois de degustarem a cerveja, isto é aliás um hábito dos monges (!). A levedura da cerveja é uma fonte natural de vitamina B.
O nome completo da abadia é Abadia de Nossa Senhora do Sagrado Coração de Westmalle. A comunidade foi fundada em 1794 por monges da Ordem dos Cistercienses da Estrita Observância e recebeu o estatuto de Abadia em 1836. Os monges desta ordem são comumente conhecidos como Trapistas, em homenagem à Abadia de La Trappe, em França. Desde o final do século XVIII que os monges da Abadia de Westmalle se dedicam a uma vida comunitária de oração e trabalho, “Ora et Labora”. Ficha Técnica
