This Wild Specialty Beer presents a nostalgic, playful profile where the tartness of a mixed-fermentation base meets the whimsical flavors of a classic treat. Vibrant, juicy cherry notes dominate the initial impression, seamlessly blending with a zesty caramel-cola character. The addition of lactose and oats provides a silky, rounded foundation, while a generous presence of smooth vanilla mimics the sensation of a melting scoop of ice cream. The result is a balanced, approachable sour that bridges the gap between traditional funky acidity and confectionery sweetness, anchored by a refreshing effervescence and a creamy, lingering finish.

Appearance. Deep ruby to garnet color (15-22 SRM). Modest, pink-tinted head with fair retention and slight lacing. Noticeable haze from the inclusion of oats and heavy fruit additions.

Aroma. High intensity with dominant notes of bright, tart cherry and aromatic cola spices including cinnamon and caramel. Sweet vanilla creaminess provides a softening backdrop to the sharp, clean lactic acidity and subtle funky esters of the mixed-fermentation base.

Taste. Vibrant, juicy cherry flavors lead into a zingy caramel-cola mid-palate. The mixed fermentation provides a refreshing, moderate lactic sourness that is expertly tempered by the residual sweetness of lactose and smooth vanilla. Very low bitterness; the finish is long and creamy, reminiscent of a dessert float with a clean, tart edge.

Mouthfeel. Medium body with a silky, rounded texture provided by the oats and lactose. Moderate carbonation creates a lively prickle that cuts through the creaminess. No alcohol warmth; smooth and coating without astringency.
