This Trappist Italian Belgian Tripel offers a unique Mediterranean interpretation of the classic style, blending monastic tradition with local botanical influence. It pours an intense gold with a profile defined by the distinctive addition of eucalyptus, which harmonizes with moderate fruity esters of orange and lemon. The eucalyptus provides a cooling, balsamic edge that tightens the fruity sweetness, leading into a firm bitterness derived from continental hops. Despite its significant strength, the high carbonation ensures a refreshing, dry finish where the botanical notes clean the palate. It is a complex, medium-bodied ale where refined alcohol warmth is elegantly softened by its signature herbal character.
Appearance. Intense gold to deep yellow (6-7 SRM). Features a long-lasting, creamy, rocky white head that leaves characteristic lacing. Clarity is excellent, presenting a brilliant, effervescent appearance.
Aroma. High intensity with a complex bouquet. Significant balsamic and cooling eucalyptus notes are prominent, weaving into moderate citrus esters of orange and lemon. A light, grainy-sweet Pilsner malt character provides a soft foundation, accompanied by moderate peppery phenols and low spicy continental hop notes.
Taste. Initial impression is incisive and moderately fruity, featuring citrus and light stone fruit flavors. The mid-palate reveals a soft, honey-like Pilsner malt sweetness that is quickly balanced by firm hop bitterness. Distinctive balsamic eucalyptus flavors refresh the palate, steering the profile away from sweetness toward a very dry, clean finish. Aftertaste is moderately bitter with lingering spicy yeast character and a cooling herbal lift.
Mouthfeel. Medium body, providing more substance than typical examples while remaining highly effervescent. Carbonation is high and prickly. A refined, elegant alcohol warmth is present but well-integrated, never harsh or fusel. Finishes dry and refreshing with no significant astringency.
