Tre Fontane Tripel

La Tripel di Tre Fontane è belgian trappist tripel prodotta dal birrificio situato all’interno dall’Abbazia delle Tre Fontane in Roma, grazie alla ricetta prodotta dalla Comunità dei Monaci Trappisti, che dal 2015 possono produrre le birre dotandole del prestigioso marchio ATP. L’unica tripel trappista italiana è una birra chiara, dal colore dorato carico tendente all’ambrato, dotata di una fine schiuma bianca mediamente persistente. Birra dal corpo medio e morbido, la Tripel di Tre Fontane sprigiona sentori maltati di caramello e biscotto, seguiti dai sentori fruttati e balsamici (soprattutto), determinati dalla presenza dell’eucalipto nella ricetta – procurato dalle piante di eucalipto che sorgono all’interno del complesso monastico. Tripel ben carbonata – come previsto dallo stile – questa birra di Tre Fontane risulta in bocca ben bilanciata, con una tendenza verso i toni balsamici, che persistono anche nel finale, secco e piacevole.

La belgian tripel – denominate trappist tripel se prodotte all’interno di un monastero trappista riconosciuto – sono ale chiare tradizionali belga dall’elevato tenore alcolico, complesse e speziati, dalla carbonazione elevata e dalla buona presenza di componenti amare.

Il birrificio è situato all’interno dell’Abbazia delle Tre Fontane, situata lungo l’antica Via Laurentina a Roma. Il complesso monastico sorge in una vallata – nota nell’antichità con il nome di Acqua Salvie – e fiorì dal 1140, quando Papa Innocenzo II diede il via ai lavori di restauro di un monastero abbandonato. La storia del Monastero alternò disavventure e rinascite sino quando venne donato ai Cistercensi. Attualmente il Monastero conta tre chiese, un giardino dove vengono coltivati gli eucalipto e gli aranci (i cui prodotti vengono impiegati nella produzione brassicola), il refettorio, l’antico liquorificio, il birrificio e lo spaccio, dove è possibile acquistare i numerosi manufatti dei monaci, tra cui le tre birre in produzione. Dal 2015 le Tre Fontane diventano il primo birrificio trappista in Italia e producono la Tripel, la Scala Coeli e la Sinergia 21.

The Abbey of the Tre Fontane is located in Rome in the sacred place where the martyrdom of St. Paul occurred in 67 AD. The Abbey takes its name from the three fountains which miraculously appeared where the head of the apostle hit the ground in three locations after he was beheaded. Hence the name, Tre Fontane (Three Fountains).

Today the Abbey is surrounded by beautiful eucalyptus trees which were planted by Monks starting in 1870. These trees were planted with the belief that eucalyptus had healing qualities that could prevent malaria. In actuality,  eucalyptus does not prevent malaria.  However, the trees do require a tremendous amount of water, therefore draining the surrounding swampy terrain.  As a result the mosquitos, which later were determined to be the actual cause of malaria, disappeared as the swamps dried up.

In 1873 with in-depth knowledge of the trees, the Trappist community began production of Eucalyptus oils and extracts. These products have strong balsamic and antiseptic properties with intense,  aromatic scent. They are also  a pleasant digestive.

In early 2000, thanks to the discovery of an ancient beer recipe, the monks began brewing Tre Fontane using the surrounding eucalyptus as a spice.  Several years of intense work have now improved the quality, and finally in May of 2015, Tre Fontane  Tripel  was awarded the ATP brand (Authentic Trappist Product). Tre Fontane is the 11th Trappist Beer in the world and the only Trappist Brewery from the ancient holy city of  Rome.

La birra Tre Fontane è l’unica birra Trappista italiana, e viene prodotta ancora oggi dai monaci dell’abbazia, nel cuore di Roma. La Tre Fontane è una birra ad alta fermentazione, di colore biondo opaco e in stile tripel, che viene prodotta con una antichissima ricetta che è stata riscoperta solo in tempi recenti. Questa birra trappista hai dei sapori davvero eccezionali, una apertura di testa con eucalipto che si espande in note rotonde e fruttate. La birra trappista viene prodotta dai monaci dell’Abbazia delle Tre Fontane a Roma. È una birra ad alta fermentazione prodotta con una ricetta esclusiva che si avvale della sapienza secolare dei monaci, ma rinvenuta fortunosamente in tempi recenti. È una birra color oro intenso dal sapore incisivo e fruttato con l’eucaliptus – piantato dai monaci per bonificare la zona circostante l’abbazia – che stringe le note fruttate portandole a sé.Per affinare la qualità della birra sono trascorsi alcuni anni, ma nel 2015 le è stato finalmente attribuito il marchio ATP (Authentic Trappist Product), l’undicesimo assegnato nel mondo.
