Ha schiuma bianca, stabile e persistente, un colore marrone-rossiccio ed un palato che s'impone, con un fruttato fortissimo (un accenno di fichi). L'aroma, come per la 6, è complesso: speziato con note amare ma anche fruttate ( banana matura e uva passa). Ha gusto leggermente dolce e non stanca, grazie alla piacevole armonia tra l'alcool e le note fruttate. Il retrogusto è nello stesso tempo dolce e secco, con un tocco dì amaro sorprendente per una birra scura.

Echt darf sich ein Trappistenbier nur nennen, wenn es von Trappistenbrüdern im Kloster gebraut wurde. Und dieser Orden betreibt nur noch 6 Brauereien, davon 5 in Belgien, drei in der Wallonie: Orval, Chimay und Rochefort. Die am wenigsten bekannte Brauerei ist wohl "La Rochefortoise" des Klosters Notre-Dame de Saint-Remy in den Ardennen, die seit 1595 in Betrieb steht. Von den 25 Mönchen, die noch im Kloster leben, arbeiten 4 in der Brauerei, zusammen mit fünf Angestellten aus der Gegend. Jeden Morgen setzen sie einen frischen Bottich an. Ihr Tageswerk beginnt nach drei Uhr morgens früh, zur Frühmesse um sieben gärt es dann bereits.
In Rochefort werden drei Biere gebraut, die durch rote, grüne und schwarze Kornkorken gekennzeichnet sind. Die Zahl 8 geht auf das alte belgische Gradsystem zurück.

El aroma es muy afrutado y dulce, haciendo honor a su estilo belga inconfundible, destacando matices como a ciruelas, melocotón o incluso algo de miel. Tiene un principio que llena la boca con consistencia, y transmite un sabor afrutado que sin la espuma podría asimilarse al de un licor fuerte. El final del trago golpea el paladar con un sabor algo alcohólico y levemente amargo, con recuerdos frutales e incluso a chocolate.
La Abadía de Notre-Dame de Saint-Remy, en Rochefort, fue fundada en 1230. Pertenece a la Orden Cisterciense de la Estricta Observancia, denominada trapense con motivo de sus vínculos históricos con la Abadía de la Trappe. Al igual que hemos visto en la historia de muchas otras Abadías, fue devastada en diversas ocasiones, consiguiendo la fuerza suficiente para volver a enderezarse con el paso de los años.
Su cervecería representa una fuente de ingresos muy importante, ya que se fabrica cerveza desde el siglo XVI. La cerveza fabricada es la Trappistes Rochefort, elaborada con productos exclusivamente naturales.
La Trappistes Rochefort 8, de chapa verde, es el modelo más fácil de encontrar de la marca, y el de mayor venta, existiendo además los números 6 y 10 (diferenciadas por el color del tapón, además)

Com a produção anual de 18 mil hectolitros, a abadia trapista de Rochefort é atualmente a segunda menor da Bélgica. Está localizado em uma paisagem montanhosa no sudeste rural da Bélgica. Os 15 monges remanescentes passam seus dias rezando, meditando e preparando as suas maravilhosas cervejas. Esta tradição começou há mais de quatro séculos e continua até hoje. Além desta cerveja, eles também preparam o Rochefort de cor âmbar 6 e a mundialmente famosa Rochefort 10, que tem um teor alcoólico superior a 11%.
