Das Rochefort 10 basiert auf einem Rezept das schon 415 Jahre alt ist. Nach diesem Rezept wird auch heute noch das Bier gebraut. Im Glas besticht das Rochefort 10 mit seinem dunklen rot bräunlichen Farbton der schon den malzigen Charakter dieses Bieres erahnen lässt. Jeder Schluck dieses Bieres kann andere Noten zum Vorschein bringen. Dominant sind aber immer die Toffee und Karamellnoten die wunderbar ausbalanciert sind. Auch Kirchnoten sind deutlich wahrnehmbar. Durch die 11.3% Alkohol erinnert das Rochefort 10 schon fast ein ein lange gereiften Rotwein oder Likör. Besonders eignet sich dies Bier um es an einem kalten Abend vor dem Kamin zu genießen.

The nose and mouth reveal a remarkable syrupy, caramelized intensity. The taste is soft at first before it becomes stronger and opens a full, spicy, slightly pungent and sharp mouthfeel. Fruity notes of ripe plum and cocoa complete the tasting. The bitterness remains quite low, giving the malty and fruity flavors a prominent place. The body is powerful but fine, noble and spicy.

Rochefort bieren worden gebrouwen door Brouwerij Rochefort in Rochefort, België. Het is één van de vijf trappistenbrouwerijen in België en gelegen in de abdij Notre-Dame de Saint-Remy.
Er bestaan zeven bieren die dit label mogen dragen. Ze worden geproduceerd in de Belgische abdijen van Achel, Chimay, Orval, Rochefort, Westmalle en Westvleteren en in Nederland in de abdij van Tilburg. Trappistenbier staat voor een mengeling van traditie en kennis, strikte normen en goede techniek.
De voornaamste grondstoffen voor het brouwen van bier zijn water, gerstemout, suiker, hop en gist. Het water, een bijzonder belangrijke grondstof, zowel kwalitatief als kwantitatief, komt direct van de bron waaruit de Tridaine ontspringt. Die bron wordt gevoed door de waterhoudende laag dicht bij de abdij. Dit natuurlijke zuivere water wordt op geen enkele wijze – chemisch noch fysisch – bewerkt.

Brasserie de Rochefort is a Belgian brewery which produces four beers designated as Trappist beers. The earliest mention of a brewery at the Trappist monastery of Rochefort Abbey dates from 1595. The abbey and its brewery were closed in 1794. The abbey was re-established in 1887 and the brewery was re-established in 1899. Around fifteen monks currently live at Rochefort Abbey. The water for the beer is drawn from a well inside the monastery walls. Rochefort uses Pilsener and Munich-type malts, and Hallertau and Golding hops.
