Trappistes Rochefort 10 is an iconic Belgian Dark Strong Ale, often referred to as a Quadrupel, showcasing a masterful blend of rich malt and expressive fermentation. The sensory journey begins with an intense bouquet of latte-like coffee and dark chocolate, accented by spicy cloves and bright citrus zest. On the palate, a profound depth of dark fruit—namely raisins, plums, and figs—mingles with vinous notes reminiscent of vintage Port. This complexity is underpinned by a bready, biscuit-like malt backbone and subtle earthy leather, finishing with a smooth, warming alcohol presence that highlights its monastic heritage and significant strength.

Appearance. Deep, dark mahogany to chestnut brown with a slight ruby tint (approx. 25–35 SRM). It features a massive, dense, and exceptionally persistent tan head that leaves thick, moussy lacing on the glass. Generally clear, though a slight yeast haze may be present.

Aroma. High intensity and deeply complex. Dominant aromas of dark chocolate, mocha, and freshly baked biscuits are layered with powerful esters of plum, raisin, and black currant. A distinctive spiciness emerges as clove and black pepper, accompanied by hints of orange peel and autumn wood. A soft, vinous alcohol character adds a perfume-like elegance.

Taste. Initial impression is richly sweet, transitioning into a multifaceted profile of dark fruit, bitter chocolate, and nutty chestnut. A moderate malt bitterness balances the dark sugar sweetness. Fermentation notes include earthy leather, subtle oak, and a touch of apricot. The finish is remarkably dry for its gravity, leaving lingering traces of cocoa, warm spices, and a refined Port wine vinousness.

Mouthfeel. Full-bodied and exceptionally creamy, almost viscous. Despite the weight, high carbonation prevents it from feeling cloying. A significant, smooth alcohol warmth provides a pleasant glow in the throat without any harsh fusel burn.

En 1952, con el objetivo de modernizar la cervecería de Rochefort de manera comercialmente adecuada, se tuvo mucho cuidado en el lanzamiento de las dos nuevas cervezas de Rochefort. La cerveza del refectorio había sido la base para el desarrollo de la «Middel» (también conocida como «Merveille»), que se convirtió en la Rochefort 6. La Rochefort 10, sin embargo, necesitaba algo más para elevarse: azúcar de caramelo, empapado en el mosto en cestas de metal, toda una innovación en esos días. Además, se utilizaron dos tipos de malta en el proceso de elaboración: malta pils y malta caramelo, así como almidón de trigo, dos variedades de lúpulo y la levadura propia de Rochefort. El resultado fue la poderosa Rochefort 10, una cerveza que seguramente calentará tu corazón con su generosa dosis de alcohol.

Definita “la Merveille”, questa birra è riconosciuta come una delle migliori birre che si possano bere, un capolavoro dell’arte brassicola. La Rochefort 10 è una delle birre trappiste più rinomate al mondo, dotata di un colore mogano con riflessi rossi e dalla schiuma cremosa e sottile. Complessa ed equlibrata, rilascia sentori di frutta, frutta secca, cioccolato, liquirizia; in bocca liquirizia, cioccolato, malto e note fruttate e speziate. Dal corpo morbido, è dotata di una soprendente bevibilità, e chiude con un finale leggermente amaro, con accenni di cioccolato e di affumicato.

La dark strong ale è una ale belga scura e complessa, corposa ed equilibrata, nella quale risaltano i toni maltati e speziati. E’ in genere la birra più forte di un birrificio.

Rochefort è uno dei marchi trappisti più famosi al mondo, uno dei sei birrifici del Belgio che possiede la denominazione di Authentic Trappist Product. La Brasserie di Rochefort si trova all’interno dell’Abbazia di Notre Dame de Saint Remy, in Vallonia, nel piccolo paese di Rochefort.

L’abbazia viene costruita nel 1230 mentre la produzione della birra inizia con l’arrivo dei monaci trappisti nel 1464, anche se il primo documento ufficiale che conferma l’attività brassicola è datato 1595. La produzione subisce delle pause in occasione dei grandi eventi della storia europea, ma dal 1952 continua ininterrottamente.

Le tre birre di Rochefort vengono prodotte con il proprio lievito e con l’acqua proveniente dalla fonte all’interno del monastero, e vengono fatte per un numero di settimane equivalente alla denominazione, adottata secondo la scala di Baumè.

Lên men: Bia có độ lên men cao và thực hiện quá trình lên men lần nữa trong chai.

Thành phần: Bia được ủ với nước suối thiên nhiên lấy lên từ suối Tridaine, mạch nha trắng và mạch nha Munich, ngũ cốc chứa mạch nha, hoa bia Hallertau và Styrian Golding , men bia, kẹo đường và đường tinh.

Màu sắc và độ tinh khiết: Bia có màu nâu đậm nhưng trong, long lánh tuyệt đẹp dưới lớp bọt bia màu kem. Bia Rochefort 10 là bia đậm màu nhất trong dòng sản phẩm bia Rochefort.

Hương vị: Ngay khi đưa ly bia Rochefort 10 lên mũi, bạn sẽ thấy ấn tượng với hương cà phê latte với mùi sô cô la mạnh trong bia. Độ cồn hòa quyện với mùi gỗ thu, mùi cam, chanh, và mùi vị bánh quy. Khi uống bia, đầu tiên ta sẽ cảm nhận thấy vị ngọt như là bia và sô cô la hòa quyện trong một chiếc cốc vậy, một thứ chất lỏng như sữa và có vị đắng. Rochefort 10 er medtaget i bogen ”50 øl du skal smage før du dør” – og det er helt forståeligt. Nogle kalder Rochefort 8 verdens bedste øl – andre hævder at det er storebroderen Rochefort 10. Begge kommer fra klostret Abbey de Notre-Dame de St. Rémy. Aromaen er stor, sød og karamelagtig. Farven er flot mørk og rødbrun, mens skummet nærmest kan karakteriseres som mokka farvet. Når du har hældt øllet op i glasset – så lad den stå nogle minutter, så den kan komme til sin fulde ret. Smagen er til trods for de 11,3 % overraskende blød, men særdeles fyldig. Smagen går i retning af mørke frugter, blommer, rosiner, brændt karamel og sukker – som sagt en kæmpe smagsoplevelse. Eftersmagen holder længe og er særdeles behagelig. Ja – en øl man skal smage før man dør!

Er zijn nog een vijftiental oudere monniken. Dit resulteert in een niet-economische verkoop: de monniken maken geen reclame, doen niet mee aan moderne trends – ze hebben bijvoorbeeld pas sinds 2006 een website – en produceren slechts wat ze nodig hebben voor hun dagelijkse bestaan en om een deel aan goede doelen te schenken. Das Rochefort 10 ist ein belgisches Trappistenbier aus der Abtei Notre-Dame de Saint-Remy. Als Trappistenbiere dürfen sich nur solche Biere bezeichnen die in einem Kloster unter Aufsicht der Mönche gebraut werden. Weltweit gibt es nur noch 8 Klöster die Bier brauen. Die Einnahmen aus den Erlösen die durch den Verkauf der Biere erzielt werden muss dem Kloster und einem gemeinnützigen Zweck zu gute kommen.

Das Rochefort 10 basiert auf einem Rezept das schon 415 Jahre alt ist. Nach diesem Rezept wird auch heute noch das Bier gebraut. Im Glas besticht das Rochefort 10 mit seinem dunklen rot bräunlichen Farbton der schon den malzigen Charakter dieses Bieres erahnen lässt. Jeder Schluck dieses Bieres kann andere Noten zum Vorschein bringen. Dominant sind aber immer die Toffee und Karamellnoten die wunderbar ausbalanciert sind. Auch Kirchnoten sind deutlich wahrnehmbar. Durch die 11.3% Alkohol erinnert das Rochefort 10 schon fast ein ein lange gereiften Rotwein oder Likör. Besonders eignet sich dies Bier um es an einem kalten Abend vor dem Kamin zu genießen.
