A Trappist ale can only be called Trappist ale when it has been brewed between the four walls of a Trappist monastery, under the supervision of the monastery’s monks, and when part of the proceeds is earmarked for charity. Pure and honest. And that’s reflected in the taste.
A “Trappist” has to satisfy a number of strict criteria proper to this logo before it may bear this name:
The beer must be brewed within the walls of a Trappist monastery, either by the monks themselves or under their supervision.
The brewery must be of secondary importance within the monastery and it should witness to the business practices proper to a monastic way of life
The brewery is not intended to be a profit-making venture. The income covers the living expenses of the monks and the maintenance of the buildings and grounds. Whatever remains is donated to charity for social work and to help persons in need.

The palate is thickish and fruity finishing with a gentle spicy hop presence and a soothing alcoholic warmth. The finish reminds me of an after dinner port wine. There is definitely candy sugar in there but it is not too sweet and the flavours are wonderfully integrated. Top class. Definitely one to sip and savour.

Rochefort 10 er medtaget i bogen ”50 øl du skal smage før du dør” – og det er helt forståeligt. Nogle kalder Rochefort 8 verdens bedste øl – andre hævder at det er storebroderen Rochefort 10. Begge kommer fra klostret Abbey de Notre-Dame de St. Rémy. Aromaen er stor, sød og karamelagtig. Farven er flot mørk og rødbrun, mens skummet nærmest kan karakteriseres som mokka farvet. Når du har hældt øllet op i glasset – så lad den stå nogle minutter, så den kan komme til sin fulde ret. Smagen er til trods for de 11,3 % overraskende blød, men særdeles fyldig. Smagen går i retning af mørke frugter, blommer, rosiner, brændt karamel og sukker – som sagt en kæmpe smagsoplevelse. Eftersmagen holder længe og er særdeles behagelig. Ja – en øl man skal smage før man dør!

Rochefort è uno dei marchi trappisti più famosi al mondo, uno dei sei birrifici del Belgio che possiede la denominazione di Authentic Trappist Product. La Brasserie di Rochefort si trova all’interno dell’Abbazia di Notre Dame de Saint Remy, in Vallonia, nel piccolo paese di Rochefort.
L’abbazia viene costruita nel 1230 mentre la produzione della birra inizia con l’arrivo dei monaci trappisti nel 1464, anche se il primo documento ufficiale che conferma l’attività brassicola è datato 1595. La produzione subisce delle pause in occasione dei grandi eventi della storia europea, ma dal 1952 continua ininterrottamente.
Le tre birre di Rochefort vengono prodotte con il proprio lievito e con l’acqua proveniente dalla fonte all’interno del monastero, e vengono fatte per un numero di settimane equivalente alla denominazione, adottata secondo la scala di Baumè.
