The long maturation in Amarone foeders introduces layers of dark fruit, aged wood, and subtle balsamic notes that provide remarkable depth. Appearance. Deep ruby to garnet; light pinkish-tan head with moderate retention and delicate lacing; slight haze with a translucent, jewel-like quality.

Taste. Immediate burst of tart red grapes and dark berries. The vinous character is assertive, with Kékfrankos providing a bright freshness against the deeper, dried-fruit notes of the Amarone-aged base. Minimal malt sweetness is quickly overtaken by a moderate, clean acidity and firm Brett-driven attenuation. Bitterness is very low. The finish is bone-dry and lingering, marked by fine-grained wood tannins and a persistent berry skin aftertaste.
Mouthfeel. Medium-light body with a vinous, slightly prickly mouthfeel. Carbonation is moderate-high, providing a lively lift. Noticeable but well-integrated alcohol warmth. Light tannin-driven astringency adds structure without being harsh.

Franc Tommie Sjef è una Wild Ale con aggiunta di uve Cabernet Franc ed una piccola percentuale di uve Kékfrankos. Dopo la macerazione con le uve, la birra è stata ulteriormente invecchiata per un altro anno e mezzo in un foeder che in precedenza conteneva vino Amarone del Veneto.
Questo ha completato la birra e le ha conferito maggiore complessità e profondità. Prima dell’imbottigliamento è stata aggiunta una piccola quantità di birra relativamente più giovane con uve Kékfrankos, per conferire un po’ di freschezza alla miscela complessiva. Inizia con un profumo delicato di fragole fresche, ciliegie e petali di rosa, seguito dalle note vinose della botte e qualche sentore funk.
Nei primi istanti di degustazione della birra si avverte frutta rossa, confettura di more, ciliegie e lamponi, a cui seguono prugne fresche. La botte conferisce alla birra un ricco sapore speziato, quasi cioccolatoso e affumicato. Perfetto per un ulteriore invecchiamento di altri 1-2 anni, per ammorbidire la birra e per far amalgamare ancora meglio il fruttato e i tannini. Quando si beve fresca si consiglia di far aprire la birra nel bicchiere o nel decanter.
