Tommie Sjef Bitter presents a sophisticated sensory marriage of vibrant, young Saison and the deep, oxidative complexity of mature beer aged in oak barrels for up to four years. The aroma is a layered tapestry of spicy continental hops, lemon zest, and an evocative earthy funk derived from extended barrel maturation. On the palate, a firm and deliberate hop bitterness—unusually pronounced for the style—intertwines with a bright acidity and rustic, grainy malt notes. This 7% ABV blend is highly attenuated and effervescent, finishing bone-dry with a lingering herbal bitterness and a nuanced vinous character from the long-term wood contact.
Appearance. Deep gold to pale amber with a slight haze from its unfiltered nature. It supports a long-lasting, dense, rocky white head that produces significant Belgian lacing. Highly effervescent with visible carbonation.
Aroma. High intensity with a complex mix of fruity-spicy yeast esters and earthy hop character. Notable scents of black pepper, citrus zest, and pome fruit are grounded by the Brettanomyces-driven funk and woody, vanillin notes of the older barrel-aged component. Malt is lightly grainy and rustic.
Taste. Initial impression is remarkably dry and bitter. A balance of peppery yeast, herbal hop flavor, and grainy malt provides a soft foundation for the sharp, lemony acidity. The hop bitterness is moderate-high and persistent, remaining in harmony with the aged oak complexity. The finish is very dry, crisp, and lingering with a clean, bitter aftertaste.
Mouthfeel. Medium-light body with very high, prickly carbonation that creates a refreshing, effervescent sensation. A light, well-integrated alcohol warmth is present, alongside a faint tannic astringency from the years of oak aging.

The resulting bitterness works well with the complexity of the older beer, that aged for 2,5 up to 4 years in oak barrels. In the nose you will come across vanilla, dusty cellar and some funk, but also a floral quality — think of lavender and chamomile. The more yeasty character of the saison, with a hint of black pepper, complements the more mature and funky characteristics of the older part of the blend. Taste-wise, you’ll find lemon zest, wood, and interesting herbal notes like sage and terragon. The bright acidity of the wild ale and the firm bitterness of the saison make this a refreshing, yet complex beer. The after taste ends dry, with hints of aromatic apples, like a good calvados. This beer is suitable for longer ageing. The bitterness and sourness of the beer are expected to merge. In addition, it’s always interesting — often fascinating and amazing — to see a beer develop over time in the bottle. When drinking fresh, we recommend to let the beer open up in the glass or decanter. Store our beers upright or lying down in a cool, dark place. Our beers are best enjoyed between 12 and 14 degrees Celsius.
