Stout Rullquin represents a masterful marriage of Belgian brewing traditions, blending the robust, roasted backbone of Rulles Brune with the complex, wild acidity of one-year-old lambics from Tilquin. This mixed fermentation ale presents a deep profile where the charred malt notes of espresso and dark chocolate meet the sharp, lemony lactic bite of aged lambic. Maturation for eight months in oak barrels imparts subtle wood tannins and a delicate earthy funk, smoothing the transition between the stout’s roasted depths and the lambic’s bright, vinous character. Refermented in the bottle, it offers a lively, effervescent finish that elegantly balances its rich malt heritage with refreshing acidity.
Appearance. Deep mahogany to near-black (35-40 SRM). Features a dense, creamy tan head with moderate retention and light lacing; clarity is clear to slightly hazy due to being unfiltered.
Aroma. High intensity with a dominant sharp lactic sourness and citrusy lemon notes. Beneath the acidity lies a complex malt character of roasted coffee, cocoa, and toasted bread, supported by earthy Brettanomyces funk and subtle oak woodiness.
Taste. Initial impression is a bracing, clean lactic acidity that quickly gives way to roasted grain and dark malt flavors. Moderate fruity esters of tart apple and dried plum emerge, complemented by vinous oak tannins. Hop bitterness is undetectable, as the sourness provides the primary balance. The finish is very dry, crisp, and clean with a lingering roasted-tart aftertaste.
Mouthfeel. Medium body with moderate to high carbonation that creates a lively, prickling sensation. Noticeable but well-integrated alcohol warmth is present. Features a crisp acidity without being harsh or astringent.
