Rusticus Uva Tempore is a complex, vinous Saison that showcases an artful assemblage of farmhouse tradition and viticulture. Conditioned with elderberries and blended with young beer macerated on whole-cluster grapes, it offers a vibrant sensory profile. Aromas of spicy black pepper and earthy hops are elevated by notes of dark berries and fresh grape must. The palate reveals a rustic, grainy malt character balanced by a firm, tannic structure from the grape skins and stems. Finishing bone-dry and highly effervescent, it delivers a refreshing yet sophisticated profile characterized by bright acidity and a lingering, spicy fruitiness.
Appearance. Deep copper with ruby highlights; a long-lasting, dense, ivory head with persistent lacing. Unfiltered and moderately hazy due to whole-cluster maceration.
Aroma. High aromatic intensity featuring a blend of spicy black pepper phenols and citrusy esters. Distinctive notes of dark elderberry and fresh-pressed grapes provide a vinous depth, supported by a low earthy hop character and a faint, grainy malt sweetness.
Taste. Initial impression is bone-dry and refreshingly tart. The flavor is a balance of spicy yeast and grainy malt, layered with dark fruit from the elderberry and a distinct vinous character. Moderate bitterness is enhanced by a light woody tannin from the grape stems. The finish is exceptionally dry, clean, and lingering with a peppery aftertaste.
Mouthfeel. Medium-light body with very high, effervescent carbonation. Features a light alcoholic warmth and a subtle, pleasant astringency from the whole-cluster grape skins that adds structure without being harsh.
