This Saison presents a rustic, complex profile derived from a thoughtful blend of aged and young ales, infused with elderberry (Sambucus Nigra). The sensory experience begins with a vibrant bouquet of dark berry fruitiness, floral notes, and the signature black pepper phenolics of farmhouse yeast. On the palate, a soft, grainy malt backbone supports a delicate tartness from the berries, harmonizing with a firm, spicy hop bitterness. Highly attenuated and effervescent, this Belgian-style ale finishes bone-dry with a lingering botanical character. The elderberry addition lends a unique depth and a subtle tannic structure to this refreshing, characterful farmhouse ale.
Appearance. Deep gold to pale amber with a distinctive purple-pink tint; hazy and unfiltered with a long-lasting, dense, rocky ivory head and excellent lacing.
