The Ale Apothecary è sicuramente uno dei migliori produttori di birre selvagge di tutti gli Stati Uniti d’America.
El Cuatro è una sour beer prodotta fermentando prima di tutto il mosto in botti ex vino, e successivamente viene lasciata ad invecchiare per oltre un anno in botti ex brandy, dove subisce un’ulteriore fermentazione ad opera di brettanomyces.
Prima di imbottigliare la birra viene miscelata con una piccola percentuale di Sahalie (altra birra di The Ale Apothecary).
Le botti di Brandy sono molto importanti per il bouquet aromatico di Brandy El Cuatro, infatti donano alla birra aromi che ricordano la prugna e la ciliegia.
