Appearance. Deep copper to dark mahogany (18-22 SRM) with ruby highlights. It features a low, off-white head with modest retention and visible legs or 'tears' on the glass due to high viscosity and alcohol content. Clarity is generally clear, though a slight haze may persist from the wild fermentation.
Aroma. High intensity with a complex, bready, and toffee-forward malt character. Strong notes of dried dark fruits—raisins and prunes—are layered with the vinous influence of wine barrels and a subtle, funky earthiness from the house yeast. Alcohol is noticeable but soft, reminiscent of a fine port or sherry.
Taste. Initial impression is a massive wave of malty sweetness, yielding flavors of burnt sugar, caramel, and biscuit. This is balanced by a moderate English hop bitterness and the drying influence of wine-soaked oak. The 'wild' character adds a light acidity and leather-like depth. The finish is lingering and moderately sweet, though the barrel tannins and alcohol warmth provide a structured, clean conclusion.
Mouthfeel. Full-bodied and exceptionally chewy with a velvety, luscious texture. Carbonation is low to moderate. A significant but smooth alcohol warmth is present, filling the chest without being harsh or fusel. There is a light tannic astringency from the fresh wine barrels.
