The sensory profile is defined by an immediate and dominant rush of sun-ripened peach juice, offering a lush, candy-like sweetness that coats the palate. Beneath the intense fruit, the traditional lambic base provides a subtle, earthy funk and a light wheat character. This sweetness is perfectly balanced by a characteristic vibrating acidity on the finish, ensuring a crisp, thirst-quenching experience. Appearance. Deep golden to pale amber (SRM 5-7) with a slight haze from the peach juice. Pours with a moderate, fine-beaded off-white head that has fair retention for the style.
Aroma. High intensity of fresh peach nectar and jammy peach skin. Subtle background aromatics of hay and a very mild lactic sourness, with the wild yeast character remaining subordinate to the fruit.
