This American Trappist Ale pours a brilliant golden-amber, crowned by a dense, persistent white head. The sensory profile is defined by a vibrant interplay of Belgian yeast esters and phenols, specifically evoking notes of ripe apple and succulent peach set against a backdrop of spicy clove and cracked black pepper. The malt presence remains delicately supportive with a light honey and cracker character. It transitions into a floral hop finish that is notably dry and crisp. This Belgian Single balances a refined effervescence with a soft malt palate, delivering a sophisticated, highly attenuated experience that honors traditional monastic table beers.
Appearance. Light amber to medium gold with a slight, natural haze from being unfiltered. Features a generous, compact, and long-lasting billowy white head with excellent lacing.
Aroma. Moderate to high intensity yeast-forward bouquet. Dominant esters of apple and peach are balanced by spicy phenols of clove and black pepper.
