This tenth-anniversary Wheat Saison presents a sophisticated sensory intersection of farmhouse brewing and enology. Fermented with farm-sourced Brettanomyces and Lactobacillus, the profile leads with a delicate lactic tartness and rustic funk, further refined by extended aging in Missouri Oak. The addition of Raspberry skins and Hibiscus imparts a vibrant, wine-like character, offering floral aromatics and bright red fruit notes reminiscent of a French rosé. Expect a crisp, highly attenuated palate where the soft texture of wheat meets firm tannins and a bone-dry, effervescent finish. It is a masterful, layered expression of terroir-driven fermentation and fruit integration.
Appearance. Vibrant pink to rose-gold (8–12 SRM); features a dense, off-white to faintly pink-tinged head with excellent retention and delicate lacing. Slight haze typical of wheat and wild fermentation.
Aroma. High intensity; prominent bouquet of fresh raspberries and floral hibiscus over a complex funk of leathery Brettanomyces. A soft, grainy wheat malt presence is complemented by a hint of vanilla and toasted wood from Missouri Oak. Fermentation-derived citrus esters and a clean, lemony lactic tartness are evident.
Taste. Initial sharp tartness gives way to succulent raspberry fruit and a tannic, floral hibiscus mid-palate. Low hop bitterness is superseded by a bright acidity. Grainy wheat flavors provide a soft foundation for earthy, spicy wild yeast notes. The finish is exceptionally dry, with lingering notes of berry skins and wood-derived structure.
Mouthfeel. Medium-light body with high, effervescent carbonation. A noticeable but pleasant tannic astringency from the oak and fruit skins provides a structured mouthfeel. Very low alcohol warmth; crisp and refreshing.
