This Belgian Single is a masterclass in nuance, balancing its low-gravity roots with the complexity of wild Missouri yeast and Missouri oak. An airy malt bill provides a soft foundation of cracker and honeyed biscuit, supporting a vibrant profile of floral hops and bright citrus. The wild fermentation imparts subtle earthy funk and a refreshing hint of tartness, while several months in oak add a delicate structure and drying tannin. It finishes bone-dry and effervescent, representing a sophisticated, rustic interpretation of a table beer that prioritizes drinkability while maintaining the sophisticated house character typical of its heritage.
Appearance. Pale straw-yellow to light gold with a slight, natural haze. Crowned by a voluminous, billowy white head that exhibits excellent retention and leaves intricate lacing on the glass.
Aroma. High intensity featuring a complex interplay of peppery phenols, lemon zest, and green pear. A backdrop of crackery malt is complemented by floral hop notes and a distinctive wild character—hints of dried hay and earthy funk. The Missouri oak contributes a very faint vanillin and woody depth.
Taste. Initial flavors of honeyed biscuit and crisp cracker lead into a mid-palate of spicy yeast and citrus. Hop bitterness is moderate but assertive, amplified by an exceptionally dry, crisp finish. The wild yeast profile adds a light acidity and rustic funk, while the oak provides a subtle, structured wood character. The aftertaste is clean, with lingering notes of lemon and floral hops.
Mouthfeel. Medium-light body with a soft, fluffy texture from the malt bill. High carbonation creates a prickly, lively effervescence on the tongue. Zero alcohol warmth, resulting in a highly refreshing and sessionable experience.

Was 2013 als Nebenprojekt von Corey und Karen begann, ist zehn Jahre später als Side Project eine der meistgesuchten und besten Brauereien weltweit. Die geschmacklich unfassbaren Stouts sind natürlich die spektakulären Highlights der Brauerei (gebt mal O.W.K. bei Untappd ein), dennoch sollte man unbedingt auch ihre Farmhouse Ales nicht nur als Nebenprodukt, sondern als ebenso versierte Detailarbeit unbedingt wahrnehmen. Auch diesem leichten, klassischen Table Beer wurde das Side Project-Treatment in Form von Fermentierung mit ihren Hefen und Bacterias, Blending und Fasslagerung in Missouri Oak-Barrels nicht verwehrt – entstanden ist ein leichtes, dennoch geschmacklich erstaunliche vertieftes Bier entstanden.
