Schneeeule Marlene is a breathtakingly vibrant, historical-style Berliner Weisse that revives the soul of Berlin's brewing heritage. Fermented with proprietary Brettanomyces strains harvested from fifty-year-old bottles, it offers a deeply layered wild complexity. A gentle, clean lactic acidity intertwines with rustic notes of sourdough bread and raw wheat. The palate is enlivened by bright, stone-fruit esters of green apple, white peach, and wild citrus, buoyed by a sparkling, highly effervescent carbonation. Remarkably dry and low in alcohol, this elegant wheat beer delivers a pristine, refreshing finish that perfectly balances rustic wild yeast depth with crisp, thirst-quenching brightness.
Appearance. Very pale straw (2 SRM) with a slight haze. Features a large, billowy white head that dissipates quickly, accompanied by intense, highly effervescent carbonation.
Aroma. Moderately high, sharply clean lactic sourness combined with a rustic sourdough bread character. Expresses delicate floral, wildflower, and mild hay notes from the historical Brettanomyces yeast, accompanied by subtle lemon zest and green apple fruitiness.
Taste. A clean, refreshing lactic acidity dominates the palate, supported by a light, doughy, bready wheat malt flavor. Subtle yeast-derived stone fruit notes of peach, lemon, and tart apple are present alongside a rustic wildflower-like wild yeast complexity. No hop flavor or bitterness is perceptible; the finish is remarkably dry, crisp, and clean.
Mouthfeel. Light-bodied but far from thin, characterized by an extremely high, champagne-like prickly carbonation. No alcohol warmth, finishing with a crisp, refreshing, and highly effervescent snap.
