This modern interpretation of a classic Berliner Weisse showcases an elegant dry-hopping profile using Hallertauer Blanc and Sorachi Ace hops. Pouring an ultra-pale straw with lively effervescence, it greets the nose with a beautiful interplay of bright lemon-herbaceous notes and delicate white wine, lemongrass, and gooseberry esters. Underneath, a clean, lactic sourness balances the rustic, sourdough complexity imparted by the house Brettanomyces strain. On the palate, a crisp, crackery wheat foundation supports a refreshing tartness that finishes bone-dry. Appearance. Pale straw-yellow with a slight, persistent haze. Features a large, billowy white head with poor retention that quickly dissipates to a thin ring, driven by high, lively effervescence.
