Sacrilège Prune is a sophisticated Wild Specialty Beer that showcases the elegance of foeder aging combined with a year-long plum maceration. The sensory journey is defined by a rustic interplay between the earthy, funky notes of Brettanomyces and the vibrant, tart character of fresh stone fruit. One year in the wood has allowed for a mellow integration of oak tannins and subtle micro-oxygenation, providing a structured backdrop for the plum's natural acidity. It presents a masterful balance of barnyard complexity and fruit-forward sharpness, culminating in a bone-dry, refreshing finish that emphasizes the brewery's skill in wild fermentation and patience.

Appearance. Deep copper to ruby-tinted amber with a slight haze from the fruit maceration. The head is off-white to light pink, showing moderate to low retention with fine lacing.

Aroma. High intensity aromatics of fresh plum, tart fruit skin, and red berries. A complex wild character follows, offering notes of wet hay, old leather, and dusty cellar. Subtle woody vanillin and oak from the foeder are evident.

Taste. Sharp, clean lactic acidity leads into a flavor profile dominated by fermented plum and stone fruit esters. The wild fermentation contributes earthy and spicy funk, while the foeder aging provides a light woody structure. Hop bitterness is very low, as the fruit and fermentation acids provide the primary balance. The finish is bone-dry and crisp with a lingering tart fruit skin aftertaste.

Mouthfeel. Medium-light body with high, prickly carbonation. A subtle, drying astringency from both the plum skins and the oak tannins enhances the crispness. Very low alcohol warmth.
