Cuvée Mistral presents a sophisticated sensory profile that marries the rustic depth of a blended Brett Beer with the delicate nuances of Alsace-grown Mistral hops. The visual presence is elegant, leading into a high-intensity bouquet where the wild fermentation’s barnyard and wet hay characteristics intertwine with the hop-derived notes of white grape, rose, and stone fruit. On the palate, the barrel-aged complexity provides a sturdy foundation for flavors of lychee and plum, underscored by a characteristic leather funk. Bone-dry and highly attenuated, this wild ale finishes with a crisp, refreshing acidity and a lingering floral elegance that defines the Mistral variety.

Appearance. Straw to light gold (4–6 SRM). The head is bright white, moderately tall with fair retention, leaving light lacing. Clarity is slightly hazy due to the wild yeast and dry-hopping, though it remains luminous.

Aroma. High intensity with a complex blend of fruity esters and earthy funk. Prominent notes of apricot, plum, and white grape from the Mistral hops are balanced by Brettanomyces-driven scents of horse blanket, hay, and a light leathery quality. Very low cracker-like malt and a subtle hint of neutral oak from the barrel aging.

Taste. The initial impression is vibrantly dry and crisp. Malt flavors are minimal, allowing the hop character of rose petals, lychee, and citrus to shine. The fermentation profile adds a moderate funk—earthy and slightly smoky—without being harsh. Bitterness is low to moderate, providing just enough structure to balance the fruity esters. The finish is bone-dry and clean, with a lingering vinous quality and faint tannins.

Mouthfeel. Medium-light body with high carbonation that creates a spritzy, refreshing sensation. No perceived alcohol warmth. There is a slight tannic prickle on the tongue from the wood aging, with no astringency.
