Sacrilège Cerise is a complex Wild Specialty Beer that presents a vibrant sensory interplay between tart fruit and earthy botanicals. The aromatic profile is defined by the sharp, acidic punch of griotte cherries, seamlessly balanced by the unique, leather-and-dried-fruit notes of cascara. Barrel aging introduces structured oak tannins and a whisper of vanilla, while the wild fermentation contributes a layered funk of wet hay and citrus zest. On the palate, a refined lactic acidity elevates the stone fruit character, followed by the cascara's tea-like earthiness. It concludes with a bone-dry finish, leaving a lingering, elegant tartness and a sophisticated woody complexity.

Appearance. Deep ruby to garnet with a distinct pinkish tint to the foam. Head retention is moderate to low, forming a thin collar. Clarity is slightly hazy due to the maceration of fruit and wild yeast activity.

Aroma. High intensity with a dominant sour cherry character from the griotte. The cascara adds nuanced layers of tobacco, dried hibiscus, and earthy coffee fruit. Fermentation aromatics include moderate Brettanomyces funk (barnyard, leather) and a sharp lactic tartness, with virtually no hop aroma and minimal cracker-like malt.

Taste. Initial impression is sharply acidic and fruit-forward. Intense griotte cherry flavor blends with the earthy, herbal notes of cascara skins. Malt presence is very low, providing just enough structure to support the acidity. Bitterness is negligible, as the balance is driven by lactic sourness and fruit tannins. The finish is bone-dry and clean with a lingering, tart cherry-skin aftertaste.

Mouthfeel. Medium-light body with an effervescent, moderate-high carbonation that enhances the perception of acidity. Low alcohol warmth is well-integrated. A noticeable but pleasant astringency is present, derived from the cascara, cherry skins, and oak barrel contact.
