This Wild Specialty Beer is a vibrant, orchard-driven experience centered on the inclusion of Estonian apple juice. The sensory profile is dominated by the crisp, tart character of green and red apples, harmoniously blended with the sharp, lactic acidity of a wild fermentation. Expect a refreshing, rustic charm where the natural esters of the juice meet a faint, earthy funk. The low ABV ensures a crushable nature, while the finish remains bone dry and revitalizing. It beautifully captures the essence of a Northern European autumn, focusing on fruit purity and bright, acidic structure over malt complexity.

Appearance. Pours a pale straw-gold with a slight, natural haze. The head is brilliant white and effervescent, fading quickly to a thin collar with minimal lacing, typical of the style's high acidity.

Aroma. High intensity of fresh, crushed apples and apple skins. Complementing this is a clean lactic sourness and a subtle, rustic funkiness. Very low bready malt notes; hop aroma is absent.

Taste. Initial impression is sharply tart and fruity, leading with a burst of authentic apple character. The malt provides a very light cracker-like foundation. Bitterness is virtually non-existent, as the acidity provides the primary balance. The finish is bone dry and exceptionally clean, with a lingering green apple skin tartness.

Mouthfeel. Light body with high, prickly carbonation that enhances the refreshing qualities. No alcohol warmth is present. A very slight, pleasant astringency from the apple tannins adds structure to the dry finish.
