Petrus Aged Pale is a benchmark Straight Sour Beer, celebrated for its complex maturation over 18 to 24 months in giant oak foeders. This unblended masterpiece presents a vibrant sensory profile defined by a sharp, clean lactic acidity and a dry, refreshing character. Bright, zesty notes of grapefruit and tart green apple dominate the palate, harmonized by subtle, vanillin-tinged wood tannins from the extended oak contact. Despite its strength, the pale malt backbone remains lean and crackery, allowing the interplay of citrus-like sourness and a faint, woody bitterness to shine. It is a sophisticated, effervescent classic that balances puckering acidity with a crisp, elegant finish.
Appearance. Gold to deep straw color (4-6 SRM). Brilliant clarity. A large, white, moussy head forms with moderate to poor retention, leaving light lacing as it fades.
Aroma. High intensity. Dominant lactic sourness with a sharp, lemony edge. Moderate fruity esters of green apple, peach, and distinctive grapefruit. Low, crackery pale malt scent. Notable aged wood character with hints of vanilla and dry oak, but no hop aroma.
Taste. Assertive initial lactic acidity that is clean and bright. Flavors of tart citrus, specifically grapefruit and lemon, are prominent. The malt profile is minimal—lightly bready or crackery. Bitterness is low but perceivable through the drying effect of wood tannins. No hop flavor. Finishes bone-dry and crisp with a lingering, refreshing tartness.
