В бокале Boon Oude Geuze Vat 91 раскрывается прозрачным золотисто-янтарным цветом с живой, игристой карбонизацией и тонкой, но стойкой белой пеной. Аромат сложный и многослойный: ярко выраженная кислинка зелёного яблока и лимонной цедры сочетается с нотами дикой ферментации, сена, дуба и лёгкими минеральными оттенками. На фоне угадываются нюансы сухофруктов и винных тонов, характерных для выдержки в дубовых бочках.
