Pensa-se que ao longo da longa história da Abbaye Notre-Dame d’Orval, houve sempre uma cervejeira no mosteiro. Vários factos corroboram essa ideia: referências topográficas em desenhos antigos; uma descrição detalhada da produção deixada por um visitante franciscano trezentos anos atrás; uma área chamada “campo de lúpulo” muito perto do mosteiro. Fazer cerveja era costume nas áreas pouco adequadas para o cultivo de vinhas. A cerveja era considerada, acima de tudo, pelas suas propriedades nutritivas: era chamada de “pão líquido”. Em 1931 a atual cervejeira foi construída, empregando leigos e estava destinada a ser uma fonte de receitas que permitisse reconstruir o mosteiro destruído em 1793 por um incêncio. A cervejeira foi projetada por Henry Vaes, que também concebeu o distinto copo de cerveja da Orval. A primeira cerveja viu a luz do dia a 7 de maio de 1932 e foi vendida em barris, em vez das garrafas de hoje. Orval foi a primeira cerveja trapista a ser vendida nacionalmente pela Bélgica. Tal como acontece com outras cervejarias trapistas, a cerveja é vendida para apoiar financeiramente o mosteiro e algumas outras boas causas. It is 6.2% ABV. This beer is brewed exclusively from spring water, barley malt, hop cones, candy sugar, and yeast. The aroma and the fine taste are due more to the hop cones and the yeast than to the malt that is used.What’s special about Orval’s beer is that hops are added at two different stages of the production process. First, in the brewing room, a large quantity of very fine hops are added – this produces the famous bitter taste and is the reason why the beer keeps for a longer period of time. Later, in the storage cellars, hops are once again added. This is the so-called British “dry hopping,” which produces the delightful aroma that completely enraptures even the most carefully forewarned taster.In the tasting room, Orval’s beer and cheese make a really good pair: the unique shape of the bottle and the glass, the design of the label, the coasters and other publicity materials – it’s all a legacy from the early 1930’s.

La birra Orval è fatta con acqua di sorgente, malto d’orzo, luppolo aromatico e di zucchero candido liquido. Caratterizzata da un’amarezza piuttosto forte e gli sapori guadagnano in intensità grazie alla maturazione in cantina per alcuni mesi.
Per migliorare gli aromi, Orval utilizza la tecnica di luppolatura a freddo (dry hopping), che consiste nel macerare durante 2-3 settimane dei sacchi contenenti dei coni di luppolo.

Es una cerveza de gran complejidad de aromas, con notas especiadas, cítricas, hierbas salvajes y flores. Predomina el aroma a lúpulo, y puede evocar aromas a vino y champagne. La adición de lúpulos entre la primera y segunda fermentación la hace única.
