The profile opens with an intriguing cider-like character reminiscent of oxidized apples, supported by the spicy nuances of white pepper and clove. A distinct lactic tang provides a refreshing brightness, while subtle notes of dried apricot add depth. The experience is underscored by a delicate woodiness from barrel aging and a refined, pithy bitterness akin to lemon peel. Appearance. Light orange color (SRM 6-8). Features a thick, dense white head with good retention. Clarity is slightly hazy, typical of a blended wild ale.

Aroma. Moderately high intensity featuring sharp lactic sourness and a distinct spicy impression of clove and white pepper. Prominent fruit notes of green apple and dried apricot are present, alongside a cider-like oxidized apple character and a hint of lemon peel.

Taste. Initial impression is driven by Saison-like spiciness and tart, oxidized apples. A clean, refreshing lactic sourness follows, supported by a low, grainy malt backbone. Hop flavor is absent, replaced by a delicate, pithy bitterness reminiscent of citric lemon peel. The balance is acidic and dry, with a lingering, crisp finish.

Mouthfeel. Medium-light body with moderate carbonation that is less fizzy than typical spontaneous fermentations. Features a crisp, mouth-watering acidity and a subtle hint of alcohol warmth. No astringency.
