The result is a vibrant, vinous profile rich with red fruit character and subtle farmhouse funk. Despite its 8% strength, it maintains a remarkably light, watery drinkability, offering a refreshing acidity and a bone-dry finish. Earthy oak nuances and grape-derived tannins provide structure to this elegant, ruby-hued marriage of beer and wine.
Appearance. Deep ruby to reddish-copper with a pinkish-white head that shows medium-low retention. Clarity is generally good with a slight, natural haze from spontaneous fermentation and grape solids.
Aroma. High intensity vinous and fruity bouquet dominated by Barbera grape must, featuring notes of red cherries and blackberries. A moderate wild character presents as earthy barnyard and light funk, complemented by subtle oak vanillin. Hop aroma and malt scents are minimal to absent.
Taste. The palate is led by a medium-high intensity of red grape flavors, including strawberry and cherry. A light, refreshing lactic sourness balances the restrained base malt. Hop bitterness is very low, allowing a bone-dry, wine-like finish to prevail. Subtle earthy notes and wood tannins add complexity without being predominant.
Mouthfeel. Medium-light body with high carbonation that enhances the aromatic perception and crispness. A distinct alcohol warmth is present but well-integrated. The finish is very dry with a slight, pleasant astringency from the grape skins.
