Sakuya is a sophisticated Brett Beer that showcases the profound impact of ten months of foudre maturation followed by a massive infusion of Montmorency cherries at 300g per liter. The complex grain bill of barley, spelt, and wheat flakes provides a rustic, cereal-forward foundation that supports an aggressive wild fermentation. Sensory cues are dominated by the vibrant acidity of griotte cherries and a refined barnyard funk. The extended wood aging imparts subtle structural tannins that meld with the bright stone fruit esters, resulting in a deeply layered profile that finishes bone-dry with a lingering, tart cherry elegance.

Appearance. A striking deep ruby-red hue with a persistent haze from the heavy fruit addition and wheat proteins; features a dense, pinkish-white head with moderate retention.

Aroma. High aromatic intensity featuring pungent fresh cherry and griotte, layered with rustic Brettanomyces notes of leather and earthy hay; a subtle spicy grain character from the spelt emerges as it warms.
