This 7% Saison represents a sophisticated Bière Fermière approach, blending Pale Ale barrels aged on Gewurztraminer and Pinot Gris lees. The sensory profile is headlined by an intense bouquet of lychee, rose petals, and white peach, directly influenced by the specific wine dregs. The palate is characteristically dry and effervescent, showcasing a rustic, grainy malt backbone alongside the complex fruity-spicy esters of the Belgian yeast. Subtle wood tannins and a hint of vinous acidity provide depth, while the finish is crisp, lingering with a peppery, floral snap. It is a harmonious marriage of brewery and vineyard character.
