This complex hybrid merges the robust, bready character of Rulles Brune with the sharp, funky soul of one-year-old lambic. The addition of 160 grams per liter of blackcurrants imparts an intense, brambly fruit profile and a deep, vinous quality. Eight months of oak barrel maturation contributes structural tannins and subtle wood spice, while bottle refermentation ensures a lively, effervescent texture. On the palate, a vibrant lactic acidity cuts through the dark malt backbone, leading to a bone-dry finish where tart cassis and earthy undertones from the oak and lambic blend linger. It is a masterful, deeply layered Straight Sour Beer.
Appearance. Deep burgundy to dark purple in color (SRM 25–35). Features a dense, light-pink to tan head with moderate retention and fine lacing. The beer is unfiltered, exhibiting a slight haze.
Aroma. High intensity. Dominated by pungent, tart blackcurrant and dark fruit esters. Supporting notes of earthy, woody oak and a subtle, funky lambic character are present. The malt provides a background of toasted bread and light cocoa from the Rulles Brune base. No hop aroma.
Taste. Initial impression is sharp, clean lactic acidity paired with intense, jammy cassis flavor. The malt profile offers toasted crust and dark grain notes. Hop bitterness is undetectable. Oak tannins provide a structural dryness that balances the fruit. Finish is long, dry, and acidic with a lingering tart berry aftertaste and clean fermentation character.
Mouthfeel. Medium-full body with high, sparkling carbonation. A noticeable but well-integrated alcohol warmth. Subtle astringency from fruit skins and oak tannins creates a crisp, refreshing, and highly effervescent texture.

7/8 del prodotto finito provengono da Rulles, che contribuisce con una birra bruna.
La restante parte invece è Lambic giovane avente 1 anno.
Dopo aver blendato le due birre vengono aggiunti 160 gr/lt di mirtillo selvatico e lasciati in macerazione per 8 mesi.
In seguito all’imbottigliamento il prodotto finito matura per altri 6 mesi prima di essere commercializzato.
Risultato finale delizioso e nel complesso
La birra appare di color mogano con riflessi violacei, schiuma beige a grana variabile abbastanza persistente.
Grande complessità aromatica che spazia dal fruttato al tostato, dal citrico al legnoso.
