This Austrian Trappist masterpiece offers a profound interpretation of the Belgian Dark Strong Ale style. Utilizing unique Alsatian wine yeast and local honey, the sensory profile is exceptionally deep and vinous. Rich roasted grains drive the character, presenting sophisticated layers of dark chocolate, licorice, and roasted coffee. The honey provides a subtle sweet-acid balance rather than overt sweetness, enhancing the complex fruitiness of ripe plums and dark berries. Despite its significant strength, Gregorius remains remarkably well-attenuated and elegant, finishing with a warming, sophisticated alcoholic glow and a lingering, slightly bitter chocolate essence that invites contemplation and reflects the monastery's honey-making tradition.
Appearance. Deep chestnut brown (approx. 18-22 SRM). Huge, dense, and persistent tan-colored head with excellent lacing. Typically clear with a slight haze possible due to bottle conditioning.
Aroma. High intensity with a complex blend of herbal and licorice notes over a rich, bready-toasty malt base. Pronounced dark fruit esters of raisins and ripe plums are accentuated by a perfumy, vinous alcohol character from the Alsatian wine yeast. Subtle hints of floral honey and roasted coffee are evident.
