This Austrian Trappist masterpiece offers a profound interpretation of the Belgian Dark Strong Ale style. Utilizing unique Alsatian wine yeast and local honey, the sensory profile is exceptionally deep and vinous. Rich roasted grains drive the character, presenting sophisticated layers of dark chocolate, licorice, and roasted coffee. The honey provides a subtle sweet-acid balance rather than overt sweetness, enhancing the complex fruitiness of ripe plums and dark berries. Despite its significant strength, Gregorius remains remarkably well-attenuated and elegant, finishing with a warming, sophisticated alcoholic glow and a lingering, slightly bitter chocolate essence that invites contemplation and reflects the monastery's honey-making tradition.

Appearance. Deep chestnut brown (approx. 18-22 SRM). Huge, dense, and persistent tan-colored head with excellent lacing. Typically clear with a slight haze possible due to bottle conditioning.

Aroma. High intensity with a complex blend of herbal and licorice notes over a rich, bready-toasty malt base. Pronounced dark fruit esters of raisins and ripe plums are accentuated by a perfumy, vinous alcohol character from the Alsatian wine yeast. Subtle hints of floral honey and roasted coffee are evident.

Taste. Rich and complex maltiness featuring prominent chocolate, licorice, and roasted grain flavors. A unique sweet-acid interplay is provided by the honey and wine yeast, balancing the deep malt profile. Low to moderate bitterness is supported by roasted malt character and alcohol. The finish is moderately dry and warming with lingering notes of coffee and dark chocolate.

Mouthfeel. Medium-full body with an unctuous, velvety texture. High carbonation that feels silky rather than sharp. Significant alcohol warmth is smooth and well-integrated. No harshness or astringency from the roasted grains.

Este lema se vive cada día con cervezas. Durante la elaboración de la cerveza, pero también durante la fermentación, la maduración y el almacenamiento tienen lugar procesos naturales. La duración de estos procesos no siempre puede ser la misma y por eso le dan a la cerveza el tiempo y la tranquilidad que necesita para desarrollar todo su sabor. Incluso hoy en día hay que tener paciencia para tomar una buena cerveza. En 2012 se fundó la actual cervecería en los terrenos del monasterio. Visually, it pours a pretty dark colour, almost black. The creamy-coloured head is long-lasting despite its thinness.
In the nose, the whole is composed of aromas of honey, cereals and sugar, promising an excellent tasting.
In the mouth, delicate sweet cherry notes emphasize the presence of honey. They rapidly disappear and give way to more strong flavours such as cacao and roasted malt. One can notice that candied figs sweeten and balance the whole. The end of the mouth is finely dominated by cacao flavours turning into an impression of dark chocolate while the fig leaves for the slightly syrupy grapes flavors to express themselves.
The alcohol seemed absent during the tasting but reveals itself at the very end without leaving any sharp bad aftertaste.
This well-balanced beer with its strong flavours and its fruity sweetness proves us that the Trappist title is still a sure sign of the quality of a product.

De aspecto, se presenta con un vistoso color tostado oscuro, casi negro. La espuma de color crema, aunque fina, persiste durante toda la degustación.
En nariz, los toques de miel, cereales y azúcar moreno forman un conjunto perfectamente equilibrado para disfrutar de una degustación única.
En boca, la miel realzada por los toques de cereza en ataque sorprende por su suavidad y delicadeza, pero deja el paso enseguida a sabores más potentes a cacao y malta tostada, que se acompañan esta vez de matices de higo confitado para suavizar y equilibrar la cerveza.
El final de boca está muy bien controlado con la evolución del cacao hacia el chocolate negro y el higo hacia la uva ligeramente melosa. El alcohol disimulado hasta ahora hace su aparición al final de todo, pero con delicadeza.
Esta cerveza bien equilibrada entre sabores potentes y un dulzor afrutado demuestra que la denominación trapense sigue siendo un valor seguro.

Al primo sorso presenta un forte corpo di malto, caratterizzato da caffe e aromi tostati. Il miele locale e un lievito alsaziano evocano un bel gioco agrodolce al palato. Sapori di cioccolato leggermente amari accompagnano il finale caldo di questa potente birra trappista. Un retrogusto di vaniglia con sentori di origano, implorano ulteriori esplorazioni. Si presenta con un colore mogano scuro con una testa di schiuma beige che però svanisce abbastanza rapidamente. Al naso offre un intenso bouquet: caramello, malti tostati, frutta rossa e frutta scura, vaniglia, spezie e miele. L’aroma di questa birra è sorprendente ed il gusto è a dir poco stupefacente. L’alcolicità è piuttosto marcata e il corpo è strutturato come da tradizione belga, ma di facile beva. Inizialmente dolce, il miele si sente subito al primo sorso, svela successivamente una sapidità inaspettatamente amara che infonde un tono secco unico. Preponderanti poi le note di liquirizia, cacao amaro, caramello e un buon tostato, ma anche un’intrigante nota fresca ed acidula. Si congeda con un retrogusto agrodolce.
