De Molen Dag & Dauw is a vibrant Fruit Beer that reimagines a classic American IPA through the distinctive, perfumed lens of bergamot. Pouring a clear amber, it offers an immediate aromatic punch of Earl Grey-like citrus and floral notes. The hop profile, featuring Chinook, Cascade, and Columbus, provides a firm foundation of resinous pine and grapefruit, while a generous dry-hopping of Amarillo amplifies the bright, orange-peel character. A subtle, refreshing tartness from the bergamot fruit cuts through the moderate caramel malt sweetness, leading to a crisp, grassy finish. It is a harmonious marriage of botanical zest and classic American hop bitterness.

Appearance. Amber (12-14 SRM) with a persistent, off-white head that leaves decorative lacing; clarity is clear to slightly hazy.

Aroma. High intensity aroma dominated by the perfumed, spicy citrus of bergamot fruit. Complementary hop notes of grapefruit, orange, and light resinous pine are present. The malt provides a moderate backing of toasted bread and light caramel.

Taste. The initial impression is a sharp, refreshing citrus zest followed by a firm hop bitterness. Flavors of orange peel and floral hops from the Cascade and Amarillo additions are prominent. The bergamot adds a light, fruity sourness that drys out the mid-palate. Malt flavor is supportive with notes of honey and biscuit, balancing a lingering, grassy, and clean bitter finish.

Mouthfeel. Medium body with moderate-high carbonation that enhances the refreshing citrus qualities. A light, well-integrated alcohol warmth is present, with very low astringency from the fruit rinds.
