De Bie Vélo
De Bie Vélo is a vibrant Belgian Tripel that artfully balances traditional monastic character with a unique botanical profile. At 8% ABV, it presents a bright sensory core of citrus and pear esters supported by a soft, honey-like Pilsner malt foundation. The experience is defined by its aromatic complexity, featuring classic yeast-driven pepper notes alongside distinctive additions of anise, coriander, and sage. These herbs enhance the dry, effervescent finish, creating a sophisticated sweet-bitter interplay. Despite its strength, the beer remains remarkably approachable, offering a clean, malty aftertaste and a lightness on the palate that encourages high drinkability.
Appearance. Deep yellow to pale amber (approx. 5–7 SRM). Brilliantly clear with lively effervescence. Produces a tall, rocky, long-lasting white head with dense creamy texture and excellent lacing.
Aroma. High intensity with a complex bouquet of peppery yeast phenols and distinct herbal notes of sage and anise. Moderate citrusy esters reminiscent of lemon and orange peel. Light, grainy-sweet malt character with a hint of honey. Hop aroma is low and floral.
Taste. Initial impression is a soft, grainy malt sweetness that transition rapidly into a firm bitterness. Flavors of coriander and spicy yeast phenols dominate the mid-palate, complemented by subtle herbal sage. Medium-high bitterness (30–35 IBU) provides excellent structure. Finishes very dry and clean with a lingering, pleasant malt aftertaste and no harshness.
Mouthfeel. Medium-light body, appearing lighter than the gravity would suggest. Highly carbonated and effervescent. Alcohol warmth is deceptive and soft, providing a gentle glow without being solventy. Smooth and creamy texture.
