The Miller presents a sophisticated intersection of wild fermentation and viticulture, showcasing the vibrant influence of Pinot Meunier grape pomace. A base of pale wheat beer, spontaneously fermented and matured in French oak, provides a rustic, textured canvas for the fruit. The sensory experience is led by expressive aromas of fresh red cherry and strawberry, intertwined with delicate floral notes and a subtle earthy undertone. On the palate, the berry-forward character persists, complemented by nuances of black pepper, faint smokiness, and structured tannins from the grape skins and seeds. A crisp, light acidity and lively carbonation drive a bone-dry, elegant finish that honors its wine-like heritage.

Appearance. Luminous ruby to deep rosé with brilliant clarity. Pours with a delicate, pink-tinted head that shows moderate retention and fine lacing.

Aroma. High intensity aromatics of sun-ripened strawberry and tart red cherry. Subtle earthy notes and floral hints from the spontaneous fermentation meld with faint vanilla and toasted wood from the French oak. Hop aroma is absent.

Taste. Initial burst of red fruit flavors, specifically wild berries and cherry. The mid-palate reveals complex savory notes of black pepper and a whisper of smoke derived from the pomace. Supportive, crackery wheat malt stays in the background. Bitterness is very low. Finish is bone-dry and clean with a lingering vinous quality.

Mouthfeel. Medium-light body with a prickly, high carbonation reminiscent of sparkling wine. Subtle alcohol warmth is present but smooth. Light tannic astringency from the skins and stems adds a pleasant structure.
