Appearance. Deep amber to coppery-brown (SRM 12-16) with a noticeable haze due to natural bottle refermentation. It supports a thick, compact white head with strong retention and moderate lacing.
Aroma. High aromatic intensity featuring clean notes of stone fruit, specifically apricot and peach, alongside floral hop characteristics. A moderately-high maltiness provides a backbone of caramel and toasted grain with moderate fruity esters.
Taste. Initial malty sweetness leads into a complex profile of toasted cereal and rich caramel. The hop flavor is floral and fruity, offering a moderate bitterness that balances the substantial malt body. La fabrica della Birra Tenute Collesi, en Apecchio, elaborara la cerveza Collesi con las límpidas aguas calcáreas del Monte Nerone, cuyas características la hacen de las mejores aguas de Europa para la producción de cerveza.
El cereal empleado es, también, de primera calidad. Se cultiva en la hacienda familiar y se maltea en unas modernas instalaciones co-propiedad de los Collesi.
Cuentan con la experiencia y conocimientos del reputadísimo Maestro Cervecero belga Mark Knops, reponsable de otras 8 cerveceras, entre ellas, la trapense Achel.
Mark Knops supervisa todo el proceso, desde el malteado del cereal hasta el embotellado.
Cerveza limpia y de aroma intenso. Con un gran cuerpo y un sabor complejo a cereales, lúpulos y frutos secos.
Marida bien con carnes rojas.
